酒度的相互折算 怎样调整酒度?低于或高于65度的白酒,怎样折算成65度白酒的重量? 在酒库的日常工作中,酒的出库入库,白酒的加浆,不同酒度的勾兑,都会遇到酒度的相互折算,也就就是怎样调整酒度的问题。如何计算?方法如下: (一) 酒度的测量 准备好洁净的1000毫升量筒一个,标准酒精计一套,标准温度计一支。将白酒置于1000毫升的量筒中,再将酒精计与温度计插入白酒中,等待3—5分钟,待酒精计在酒液中平稳,温度计不再升温时,读取酒精计的液面下线刻度;同时,迅速读取该酒度下的温度数。然后查酒度与温度校正表,就可得到该温度下,折合成20℃标准温度所应得的酒度数。一般白酒厂在白酒交库验收时,采用一种粗略的计算方法,即:在读取酒精计的刻度后,再读取温度计上的温度数,每低于或高于20℃时,高3℃扣酒度1度,低3℃加酒度1度。也就就是温度以20℃为准,每高1℃扣酒度0、33度,每低1℃,加酒度0、33度。这样的方法,虽然简便,但不够精确。 (二) 温度计的校验

一般标准温度计很难购买,可用普通温度计与标准温度计进行校验,其方法如下: 1.在低温下校验: 取标准温度计与普通温度计各一支,将标准温度计与被校验的普通温度计,放入冰水或有适量冷却剂的水中。例如,在100毫升水中,加入30克氯化铵,可使水温降至-5、1℃待降至所需的水温后,将水搅匀,读取标准温度计的整数,同时迅速读出被检温度计的温度。两者之差,即为被检温度计的校正数。然后,使水温逐度上升,读取标准温度计的温度整数,逐度按上法与被检温度计的温度相比较,记下各自的温度读数,可制得标准温度计与被检温度计的温度差数表。在用被检温度计实测温度时,可根据被检温度计的温度数,查阅应得的标准温度。 2.在高温下校验: 可将标准温度计与被检测的普通温度计,在水浴中加热,使标准温度计逐度上升,如上法逐度校正被检温度计。若被校验的温度计在100—200℃,可用甘油代替水浴,如上法进行校验。 (三) 酒精含量的换算
