二十四节气的英文表达你会吗？ 11月30日，中国申报的“二十四
节气”正式列入联合国教科文组织人类非物质文化遗产代表作名录。
对于二十四节气，联合国教科文组织是这样介绍的：

中国：二十四节气，中国人通过观察太阳周年运动而形成的时间知
识体系及其实践中国古人通过观察太阳周年运动将太阳周年运动轨
迹划分为24等份，每一等份为一个“节气”，统称“二十四节气”。雨水、霜降等“二十四节气”指导着中国的传统农业生产和日常生活。
一些民间节日习俗也与这些节气相关，成为社区文化身份认同的重
要组成部分。相关知识在家族和学校中传承。
提起二十四节气，小u的第一反应就是：夏至吃凉面、冬至吃饺子……曾有个问题一直困扰着小u：是不是每个节气都有相应的美食呢？当二十四节气与美食相遇，会产生怎样的反应？

春季（spring）
立春（start of spring）
2月3日或4日
立春日吃春饼称为“咬春”。汉族民间在立春这一天要吃一些春天的
新鲜蔬菜，既为防病，又有迎接新春的意味。唐《四时宝镜》记载：“立春，食芦、春饼、生菜，号?菜盘?。”可见唐代人已经开始试春
盘、吃春饼了。所谓春饼，又叫荷叶饼，其实是一种烫面薄饼--用两
小块水面，中间抹油，擀成薄饼，烙熟后可揭成两张。春饼是用来
卷菜吃的，菜包括熟菜和炒菜。
雨水（rain water ）
2月18日或19日
雨水的一个主要习俗是女婿去给岳父岳母送节。送节的礼品则通常
是两把藤椅，上面缠着一丈二尺长的红带，这称为“接寿”，祝岳父
岳母长命百岁。另外一个典型礼品就是“罐
罐肉”：用沙锅炖了猪脚和雪山大豆、海带，再用红纸、红绳封了罐口，给岳父岳母送去。这是对辛辛苦苦将女儿养育成人的岳父岳母
表示感谢和敬意。
惊蛰（awakening of insects）
3月5日或6日
在陕西、甘肃、江苏、山东等地，人们把黄豆、芝麻之类放在锅里
翻炒，噼里啪啦，谓之“爆龙眼”，求风调雨顺，然后男女老少争抢
炒熟的黄豆吃掉，谓之“吃虫”，意喻人畜无病，庄稼无害。
除了“吃虫”，还有惊蛰吃梨的习俗，意寓与害虫别离。
春分（spring equinox）
3月20日或21日
“春菜”是一种野苋菜，乡人称之为“春碧蒿”。在广西的一些地区，
逢春分时节，村里很多人去采摘春菜。一般将采回的春菜与鱼片“滚汤”，名曰“春汤”。有顺口溜道“春汤灌脏，洗涤肝肠。阖家老少，
平安健康。”村民还由此祈福家宅安宁，家人身壮力健。清明

4月5日前后
清明时节有吃青团的风俗习惯。青团是用一种名叫“浆麦草”的野生
植物捣烂后挤压出汁，接着取用这种汁同晾干后的水磨纯糯米粉拌
匀揉和，然后开始制作团子。团子的馅心是用细腻的糖豆沙制成，
在包馅时，另放入一小块糖猪油。团坯制好后，将它们入笼蒸熟，
出笼时用毛刷将熟菜油均匀地刷在团子的表面，这便大功告成了。
青团油绿如玉，糯韧绵软，清香扑鼻，吃起来甜而不腻，肥而不腴。青团还是江南一带人用来祭祀祖先的必备食品，正因为如此，青团
在江南一带的民间食俗中显得格外重要。谷雨（grain rain）
4月19日或20日
谷雨茶也就是雨前茶，是谷雨时节采制的春茶，又叫二春茶。春季
温度适中，雨量充沛，加上茶树经半年冬季的休养生息，使得春梢
芽叶肥硕，色泽翠绿，叶质柔软，富含多种维生素和氨基酸，使春
茶滋味鲜活，香气怡人。
传说谷雨这天的茶喝了会清火、辟邪、明目等，所以南方有谷雨摘
茶习俗，谷雨这天不管是什么天气，人们都会去茶山摘一些新茶回
来喝，以祈求健康。
夏季（summer）
立夏（start of summer）
5月5日或6日
旧时，乡间用赤豆、黄豆、黑豆、青豆、绿豆等五色豆拌合白粳米
煮成“五色饭”，后演变改为倭豆肉煮糯米饭，菜有苋菜黄鱼羹，称
吃“立夏饭”。
小满（grain buds）
5月21日前后
小满寓意是丰收的到来，大麦、冬小麦等夏收作物已经结果，籽粒
渐见饱满，但是还没有成熟，正是青黄不接的时候，所以叫“小满”。因此在过去，很多百姓不得不用苦菜来充饥，吃苦菜也就成了小满
节气的独特食俗。
芒种（grain in ear）
6月5日或6日
在南方，每年五、六月是梅子成熟的季节，三国时有“青梅煮酒论英雄”的典故。青梅含有多种天然优质有机酸和丰富的矿物质，具有净血、整肠、降血脂、消除疲劳、美容、调节酸碱平衡、增强人体免
疫力等独特营养保健功能。但是，新鲜梅子大多味道酸涩，难以直
接入口，需加工后方可食用，这种加工过程便是煮梅。
夏至（summer solstice）
6月21日或22日
“冬至饺子夏至面”，好吃的北京人在夏至这天讲究吃面。按照老北
京的风俗习惯，每年一到夏至节气就可以大啖生菜、凉面了，因为
这个时候气候炎热，吃些生冷之物可以降火开胃，又不至于因
寒凉而损害健康。夏至这天，北京各家面馆人气很旺。无论面馆的
四川凉面、担担面、红烧肉面还是炸酱面等等，各种面条都很“畅销”。
小暑（minor heat）
7月7日或8日
民间有小暑吃藕的习惯，藕具有清热养血除烦等功效，适合夏天食用。鲜藕以小火煨烂，切片后加适量蜂蜜。
大暑（major heat）
7月22日或23日
福建莆田人在大暑时节有吃荔枝、羊肉和米糟的习俗，叫做“过大暑”。米糟是将米饭拌和白米曲，让它发酵，透熟成糟；到大暑那天，把它划成一块块，加些红糖煮食，可“大补元气”。
秋季（autumn）

8月8日前后
立秋正是吃茄子的好时候。人们在立秋前一天把瓜、蒸茄脯、香糯
汤等放在院子里晾一晚，于立秋当日吃下，据说有很好的养生效果。处暑（end of heat）
8月23日前后
在我国许多地方，处暑意味着凉秋的开始。从这一天以后，我国大
部分地区温差增大、昼暖夜凉；但是有的地方也会出现“秋老虎”的
短暂高温天气。此时饮食应遵从处暑时节润肺健脾的原则，常吃些
清热、生津、养阴的食物，如鸭子、百合。老鸭味甘性凉，因此
民间有处暑吃鸭子的传统，做法也五花八门，有白切鸭、柠檬鸭、
子姜鸭、烤鸭、荷叶鸭、核桃鸭等。北京至今还保留着这一传统，
一般处暑这天，北京人都会到店里去买处暑百合鸭等。
白露（white dew）
9月7日或8日
资兴兴宁、三都、蓼江一带历来有酿酒习俗。每年白露节一到，家
家酿酒，待客接人必喝“土酒”。其酒温中含热，略带甜味，称“白露
米酒”。白露米酒中的精品是“程酒”，是因取程江水酿制而得名。程酒，古为贡酒，盛名入远。
秋分（autumn equinox）
9月23日前后
自古以来蟹即是中国人的美食，隋炀帝以蟹为食品第一，宋元时期
流行吃“洗手蟹”，系以盐、酒、橙皮、花椒等调料腌渍而成。明代
的漕书为了吃蟹，用锤、刀、钳等三件来对付蟹之硬壳。在晚清，
苏州人制作专门用以吃蟹的工具“蟹八件”，“蟹八件”一度成了苏州
人嫁女的嫁妆，而鼎盛时期蟹工具竟多达六十四件。
寒露（cold dew）
10月8日前后
寒露到，天气由凉爽转向寒冷。根据中医“春夏养阳，秋冬养阴”的四时养生理论，这时人们应养阴防燥、润肺益胃。于是，民间就有了“寒露吃芝麻”的习俗。
霜降（frosts descent）
10月23日或24日
不少地方都有霜降吃牛肉的习俗。例如广西玉林，这里的居民习惯在霜降这天，早餐吃牛河炒粉，午餐或晚餐吃牛肉炒萝卜或是牛腩煲之类的来补充能量，祈求在冬天里身体暖和强健。

在我国南方，立冬人们爱吃些鸡鸭鱼肉，在台湾立冬这一天，街头的“羊肉炉”、“姜母鸭”等冬令进补餐厅高朋满座。许多家庭还会炖麻油鸡、四物鸡来补充能量。
小雪（minor snow）
11月22日或23日
小雪节气吃糍粑，是南方地区的传统民俗。糍粑是用糯米蒸熟捣烂后所制成的一种食品，是中国南方一些地区流行的美食。古时，糍粑是南方地区传统的节日祭品，最早是农民用来祭牛神的供品，民间有俗语“十月朝，糍粑禄禄烧”，就是指的祭祀事件。大雪（major snow）
12月7日或8日
老南京有句俗语，叫做“小雪腌菜，大雪腌肉”。大雪节气一到，家家户户忙着腌制“咸货”。将大盐加八角、桂皮、花椒、白糖等入锅炒熟，待炒过的花椒盐凉透后，涂抹在鱼、肉和光禽内外，反复揉搓，直到肉色由鲜转暗，表面有液体渗出时，再把肉连剩下的盐放进缸内，用石头压住，放在阴凉背光的地方，半月后取出，将腌出的卤汁入锅加水烧开，撇去浮沫，放入晾干的禽畜肉，一层层码在缸内，倒入盐卤，再压上大石头，十日后取出，挂在朝阳的屋檐下晾晒干，以迎接新年。
冬至（winter solstice）

冬至经过数千年发展，形成了独特的节令食文化。吃饺子成为多数
中国人冬至的风俗。每年农历冬至这天，不论贫富，饺子是必不可
少的节日饭。谚云：“十月一，冬至到，家家户户吃水饺。”
小寒（minor cold）
1月5日或6日
到了小寒，老南京一般会煮菜饭吃，菜饭的内容并不相同，有用矮
脚黄青菜与咸肉片、香肠片或是板鸭丁，再剁上一些生姜粒与糯米
一起煮的，十分香鲜可口。其中矮脚黄、香肠、板鸭都是南京的著
名特产，可谓是真正的南京菜饭，甚至可与腊八粥相媲美。大寒（major cold）
1月20日前后
民间有大寒节气吃糯米的说法，因为糯米能够补养人体正气，吃了
后会周身发热，起到御寒、养胃、滋补的作用。而糯米制作的食品，最典型的就是八宝饭。糯米蒸熟，拌以糖、猪油、桂花，倒入装有
红枣、薏米、莲子、桂圆肉等果料的器具内，蒸熟后再浇上糖卤汁
即成。味道甜美，是节日和待客佳品。

it is said that dumplings were invented by zhang zhongjing, a well-known doctor from the eastern-han dynasty. one winter,
he saw that many people’s ears were frozen and it troubled him. when he went home, he asked his disciples to boil mutton, chilies and other ingredients with medicinal properties for fending off cold in a pot. after these were boiled, they ladled
the mutton and other ingredients out of the pot, chopped them into pieces, and then wrapped them with dough skins in the shape of ears. afterward, they put these into pots to boil again. on the day of the winter solstice, the people whose ears were frozen were sent to eat the dumplings. zhang zhongjing called
it “cold dispelling dumpling soup”. people who ate it felt warm from head to toe. their ears heated up, healing ailments caused by the cold.
传说，饺子是东汉名医张仲景发明的。有一年冬天，他看到很多人
耳朵冻烂了，心里很难受。回家后，张仲景让他的弟子用羊肉、辣
