瓜蒌皮饮料功效成分与抗氧化活性研究

摘 要:文章研制了一种瓜蒌皮饮料(T PB ),分析其功效成分,并研究在储藏期间抗氧化活性的变化。结果表明:T PB 的膳食纤维、维生素C 、总酚及总黄酮的质量浓度分别为4畅58g /L 、43畅27μg /mL 、96畅90μg GAE /mL 和21畅00mg /L ,共含有14种氨基酸,其中丙氨酸、苏氨酸、精氨酸及天冬氨酸的浓度较高;在60d 储藏期间,其抗氧化活性逐渐降低,储藏期结束后其DPPH ?清除率、ABTS ?清除率及亚铁还原能力分别降至28畅40%、35畅21%、1畅07mmol AAE /mL ,高于金银花醇饮料的抗氧化能力。由此可见,瓜蒌皮饮料储藏60d 后仍具有较高的抗氧化活性,说明瓜蒌皮饮料是一种功效成分丰富的饮料,具有较强的抗氧化功能。

Functional compositions of trichosanthis p ericarpium beverage and its antioxidant activity

Abstract :Trichosanthis p ericarpium beverage (T PB )was prepared ,its nutritional composition was an ‐alyzed and the change of its antioxidant activity during the storage was measured .T he results showed that the total contents of dietary fiber ,vitamin C ,total phenolics and total flavonoids of T PB were 4畅58g /L ,43畅27μg /mL ,96畅90μg GAE /mL and 21畅00mg /L ,respectively .Fourteen kinds of amino acids were detected in T PB ,and the contents of alanine (Ala ),threonine (T hr ),arginine (Arg )and as ‐p artic acid (Asp )were higher .During the 60days of storage ,the antioxidant activity decreased gradu ‐ally .After the storage ,DPPH ?radical scavenging activity ,ABTS ?scavenging activity and FRAP of T PB were 28畅40%,35畅21%,and 1畅07mmol AAE /mL .T he antioxidant activity of T PB was signifi ‐cantly higher than that of honeysuckle alcohol .T herefore ,T PB was a nutrient ‐rich drink ow ning strong antioxidative and antiaging activities .Key words :trichosanthis p ericarpium beverage (T PB );functional composition ;antioxidant activity
