瓜蒌皮饮料功效成分与抗氧化活性研究

瓜蒌皮饮料功效成分与抗氧化活性研究

摘 要：文章研制了一种瓜蒌皮饮料（T PB ），分析其功效成分，并研究在储藏期间抗氧化活性的变化。结果表明：T PB 的膳食纤维、维生素C 、总酚及总黄酮的质量浓度分别为４畅５８g ／L 、４３畅２７μg ／mL 、９６畅９０μg GAE ／mL 和２１畅００mg ／L ，共含有１４种氨基酸，其中丙氨酸、苏氨酸、精氨酸及天冬氨酸的浓度较高；在６０d 储藏期间，其抗氧化活性逐渐降低，储藏期结束后其DPPH ?清除率、ABTS ?清除率及亚铁还原能力分别降至２８畅４０％、３５畅２１％、１畅０７mmol AAE ／mL ，高于金银花醇饮料的抗氧化能力。由此可见，瓜蒌皮饮料储藏６０d 后仍具有较高的抗氧化活性，说明瓜蒌皮饮料是一种功效成分丰富的饮料，具有较强的抗氧化功能。

Functional compositions of trichosanthis p ericarpium beverage and its antioxidant activity

Abstract ：Trichosanthis p ericarpium beverage （T PB ）was prepared ，its nutritional composition was an ‐alyzed and the change of its antioxidant activity during the storage was measured ．T he results showed that the total contents of dietary fiber ，vitamin C ，total phenolics and total flavonoids of T PB were ４畅５８g ／L ，４３畅２７μg ／mL ，９６畅９０μg GAE ／mL and ２１畅００mg ／L ，respectively ．Fourteen kinds of amino acids were detected in T PB ，and the contents of alanine （Ala ），threonine （T hr ），arginine （Arg ）and as ‐p artic acid （Asp ）were higher ．During the ６０days of storage ，the antioxidant activity decreased gradu ‐ally ．After the storage ，DPPH ?radical scavenging activity ，ABTS ?scavenging activity and FRAP of T PB were ２８畅４０％，３５畅２１％，and １畅０７mmol AAE ／mL ．T he antioxidant activity of T PB was signifi ‐cantly higher than that of honeysuckle alcohol ．T herefore ，T PB was a nutrient ‐rich drink ow ning strong antioxidative and antiaging activities ．Key words ：trichosanthis p ericarpium beverage （T PB ）；functional composition ；antioxidant activity
０ 引 言随着现代社会的快速发展和人们生活水平的提高，人们对饮料食品的需求急剧增加，饮料食品的种类越来越多，包括碳酸饮料、蔬菜汁饮料、含
乳饮料、植物蛋白饮料及发酵乳饮料等［１‐２］。近年
来，饮料市场出现很多功能性饮料，如氨基酸含量
较高的灵芝乳饮料［３］、能增强机体免疫力的密环
菌饮料［４］、具有抗氧化功能的山核桃黑豆酸奶［２］。
