Imagine eating everything delicious you want with none of the fat. That would be great, wouldn't it? Olestra, which is made from six to eight molecules of fatty acids, is too large for the intestines to absorb. It just slides through the intestines without being broken down.Manufacturers say it's that ability to slide unchanged through the intestines that makes olestra so valuable as a fat substitute. It provides consumers with the taste of regular fat without any bad effects on the body. But critics say olestra can prevent vitamins A, D, E and K from being absorbed. Health experts have tried to get many restaurants to serve smaller portions. Now,apparently, some customers are calling for this too. The restaurant industry trade magazine QSR reported last month that 57% of more than 4,000 people surveyed believe restaurants serve portions that are too large; 230 had no opinion, 20 percent disagreed. But a closer look at the survey indicates that many Americans who can't afford fine dining still prefer large portions.70 percent of those earning at least $150,000 per year prefer smaller portions; but only 45% of those earning less than

$25,000 want smaller.
