[先知] 烹调是一种文化,至少在中国是一种文化。西方烹调倾向于科学性,这种倾向使其日趋机械、规范。中国烹调倾向于艺术性,它的特点就是随意性。所以在翻译一些中国的烹调技巧的时候,往往会碰到是西方文化中所没有的,如是,只能以一些类似的烹调技巧来形容大概中菜的做法。再加上时代进步,烹调的工具亦有改进,故某些旧式的烹调方式已不一样。

个人认为翻译中菜,主要是简单说明烹调法、主要材料及酱料味道即可,如 Sautéed Sliced Beef with Ginger and Onion 姜葱爆牛肉,至于之前的调味腌料等,则可以省掉,否则落于繁锁。

焙、烘、焗、烤 Baked:如 Oven Baked Potato 烤马铃薯。
(不论是否用叉) 烧烤 Barbecued/Grilled:如 Barbecued Spare Ribs. 碳烧/烤猪排骨、Barbecued Lamb Skewer烤羊肉串。
灼、煮、涮 Boiled:如 Boiled Fish With Chili Oil 水煮鱼。
五香、加调味品 Boned:五香、加调味品是 Spiced。Boned 是翻错,Boned 是去骨。如 Grilled Five-Spiced Chicken 烤五香鸡。
烩、炖、焖、扒 Braised:烩是 Braised,Assorted 是拼成的菜,不是烹调法。如 Braised Ox Tail With Red Wine 法国红酒烩牛尾、Braised Prawns 烩大虾。
烧 Burnt:不用Burnt,Burnt是烤焦了,不能吃。
去骨 Casserole (Or Hot Pot):翻错,Casserole是法文中「炖锅」的意思,一般是指以陶瓷、玻璃或铸铁制成的器皿,里面放菜,用烤箱烹煮,然后直接端上桌。如 Boned Chicken 去骨鸡。
腊、腌制 Cured:如 Cured Ham 金华火腿。
熬、熬浓 Decocted/Inspissated:Decocted/Inspissated都不常用,好像是熬药。
氽 Deviled:氽是氽烫去血水,不是烹调法,只是一烹调的过程,Deviled 是翻错。
炖 Double Boiled:如 Double Boiled Bird's Nest With Coconut Juice 椰汁炖官燕。
醉 Drunken:如 Drunken Chicken 醉鸡、Drunken Prawns 上海醉虾。
干炸 Dry Fried:这是中式英语,如 干煸四季豆 Stirred-Fried French B
