法语菜名

法國菜單名詞–主菜及總稱到法國餐廳點菜不是件簡單的事,加上法國料理相較其他歐美國家來說複雜許多,所以如果不預先作點小功課,常常坐下來看到菜單就傻眼。
即使服務生能說英文願意耐心解釋,但等他們說完一大串,你會發現腦袋還是一片空白,因為有很多法國專有的菜名和材料,他們用英文怎麼也說不清楚。
好吧,好不容易點完菜,卻往往在菜上來後第二度傻眼,然後你必須勉強吞下其實完全不是你想像的菜餚,最後還得心疼的付出不低的價錢,可是卻一點也沒有想像中吃了法國美食的滿足感。
基於自己也曾有這樣的痛苦經驗,我把幾道比較特別且常見的主菜名字還有各種食材的名稱列表,讓你們起碼有點基本概念,點菜時也不至於手足無措。
不過法國菜跟中國菜一樣複雜精緻程度相當高,所以我列出的只是最常見的名詞,無法涵蓋所有菜名和材料,但我想已經足夠應付最基本的狀況了!祝你們用餐愉快!(因為篇幅太長,我們把名詞解釋拆成三部分,這篇是「主菜和總稱」,另外還有「法國菜單名詞解釋-肉類、魚和海鮮」和「法國菜單名詞解釋-蔬菜和香Plat 主菜Blanquette de veau 白醬燉小牛肉把小牛肉加上洋蔥、芹菜、紅蘿蔔再加上奶油、鮮奶油、蛋黃和麵粉一起煨煮到熟爛,湯汁濃稠。
Bœuf bourguignon 勃根地紅酒燉牛肉法國勃根地(Bourgogne)名菜,是用勃根地紅酒加上蒜頭、洋蔥、紅蘿蔔、蘑菇、培根肉和香料束一起熬煮的牛肉。
Bœuf en daube 紅酒燉牛肉「daube」在法文是燜肉、煨肉的意思。
這是一道用牛加紅酒慢慢燉煮的牛肉,還加上洋蔥和番茄一起入味,是法國南部的菜式。
Bouillabaisse 馬賽魚湯來自法國南部普羅旺斯省馬賽漁港的名菜,是用多種不同的魚和蔬菜加上蒜頭、橘子皮、羅勒、月桂葉、茴香和蕃紅花等香料一起熬煮的。
Cassoulet 豆燜肉法國西南方的特色菜,尤其是卡斯泰爾諾達(Castelnaudary)、土魯斯(Toulouse)、和有名的中古世紀老城卡卡頌(Carcassonne)幾個城市,但在巴黎的餐廳普遍都看得到這道菜。

法国菜菜谱篇一:如何吃法国菜Lemenu固定价格的菜谱,类似我们的套餐。
这种菜谱一般固定了上菜的内容,在主菜、甜点上可能会有2-3种样式供就餐者选择。
这种菜谱价格一般最便宜,有的餐厅只有这种菜谱,在橱窗上也把菜谱印上去,或者在餐厅外的小黑板上列出来。
如果你想省去点菜麻烦以及省钱,这类菜谱比较方便。

在法语中,菜单有几种。
“Lemenu”指的是价格固定的菜单,相当于2道或3道的套餐,选择有限,但通常最便宜,有些餐馆,它是唯一的。
“menudesaison”指的是季节套餐,像巴黎的bristol米其林3星餐厅的季节套餐,每3个星期更换一次,一份套餐的价格是70欧元。
而“Lacarte”指的就是广义上的菜单,一般服务员手中都有,你可以随便点。
“Lacartedesvins”指的就是酒单。
还有另外一种单子叫“uned égustatio”,这是“试尝”菜单,即你可以要求先来一点点尝试一下。
法国菜的复杂大家众所周知,比方说最多有11道,基本上这属于很隆重的一顿大餐了,我们且不去讲它,估计那种情况下都是由人给你安排好了的,你不必选择。
这里讲基本的。
“unapéritif”指的是鸡尾酒和餐前饮料,“unamuse-bouche”或“amuse-gueule”意思是小吃,“uneentrée”,entrée在英语中一般指的是主菜,而法语中说的是头菜、开胃菜,这点需要区别开来,“leplatprincipal”说的才是主菜,主菜又分为海鲜(poisson)和肉类(Viande)两种。
