泰國菜的調味料花樣繁複,有辣椒、咖哩、魚露、蝦醬、椰 奶…等天然佐料來加重食物口味。同時泰國人在做菜時,也常 用九層塔、胡萎、紫蘇、薄荷葉、檸檬葉等香料,再加上各種 切、剁、搗、拌等繁複的處理方式,使得泰國菜餚在口味上獨 樹一格。 泰國在不同地區之間,飲食口味及偏好稍有差異。例如靠近寮 國的東北地區是以糯米為主食。而已清邁為中心的北部地區, 則以米粉、河粉為多,且與其他地區不同的是,泰北的調味醬 中不放椰子,少了一份椰香,在泰國北方有一種筵席叫「堪扥 克」(Kantoke)帝王餐,其中美食配合舞蹈表演,是級高的娛 樂饗宴。 另外,在曼谷附近的中不平原則為米食品,中部以 南的地區,因盛產海鮮,因此海鮮料理相當有名。南部食物則 因受了回族和馬來風味的影響,較偏重咖哩口味。

卡儂金米線是泰國人的傳統食品,常用作節日齋僧 食品。所謂"米線"就是圓形米粉,遠在曼谷王朝拉 瑪一世時代,泰國人就吃這種食物了。人們將大米 浸泡後,舂或磨成大米麵,揉成麵團,用鍋蒸或煮 熟後,再搗一次,以增加粘性,再放入卡儂金米線 器內壓成米線,米線順著壓制器下面的小孔落入開 水鍋中。煮和甜辣湯兩種。
從一月至四月盛產的水果有葡萄、甜蜜菠籮、爪哇蘋果、橘子、西瓜 和石榴,跟著上市的是芒果、荔枝、菠籮、榴槤和山竹。從七月開始 是龍眼、黃皮、青李子、柚子、泰國荔枝、紅毛丹及人參果等水果的 收成期,而橘子、葡萄、西瓜、香蕉、椰子、菠籮則全年有售。部分 地區的農村再水果收成時,舉行特別慶典,及熱鬧的節日,有時更有 選美活動。

Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter.[1]As an acknowledged expert of Thai cuisine, David Thompson, explains Thai food (from a Western perspective): "Thai food ain't about simplicity. It's about the juggling of disparate elements to create a harmonious finish. Like a complex musical chord it's got to have a smooth surface but it doesn't matter what's happening underneath. Simplicity isn't the dictum here, at all. Some westerners think it's a jumble of flavours, but to a Thai that's important, it's the complexity they delight in."Tom yum or tom yam is a spicy clear soup typical in Laos and Thailand. Tom yum is widely served in neighbouring countries such as Malaysia, Singapore and Indonesia, and has been popularised around the world.Literally, the words "tom yum" are derived from two Tai words: "tom" and "yam". "Tom" refers to boiling process, while "yam" refers to a kind of Lao and Thai spicy and sour salad. Thus, "tom yum" is a Lao and Thai hot and sour soup. Indeed, tom yum is characterised by its distinct hot and sour flavours, with fragrant herbs generously used in the broth. The basic broth is made of stock and fresh ingredients such as lemongrass, kaffir lime leaves, galangal, lime juice, fish sauce, and crushed chili peppers.In neighbouring countries like Singapore, Malaysia and Indonesia, the name tom yum is used widely for various spicy soups which can differ greatly from true Lao and Thai tom yum soup. As a result, people are often confused by the disparities. Commercial tom yum paste is made by crushing all the herb ingredients and stir frying in oil. Seasoning and other preservative ingredients are then added. The paste is bottled or packaged and sold around the world. Tom yum flavoured with the paste may have different characteristics from that made with fresh herb ingredients. 作法
将高汤用中火加热,煮沸后加 入柠檬叶、姜根和柠檬香茅、 青葱然后再加入蘑菇和辣椒, 用文火煮2分钟,放入草虾再 加热至滚,至虾肉变红,但不 要超过1分钟。准备一个汤碗, 放入莱姆汁和辣椒酱,再将汤 倒入汤碗中,搅拌均匀,最后 再加入香菜装饰.

这是一种近似广东菜的做法,新鲜的蔬菜,佐 以泰式调料,可以炒出一道道口感极其新鲜 的菜。如:米粉(虾,猪肉,鸡蛋及甜酸酱合 炒)、泰国咖哩鸡、椰汁鸡(鸡汁加柠檬加椰 奶)、牛肉沙拉等。
