本文中所讲的餐桌礼仪,主要是讲在外事国际背景下的中餐礼仪,采取跨文化研究中的主客体文化的方法,从中国文化的内部去观察餐桌礼仪。

1. 餐桌礼仪所采用的跨文化传通总体原则。

跨文化的传通(传播和沟通)要从某一文化情景中进行,由此形成对某一文化相对有利和不有利的情况。

在本族跨文化情境中的跨文化传通对于其交际者而言乃是主文化(host culture),相反则是客文化(guest culture).一般说来,作为主文化一方在跨文化传通中往往居于有利地位,及客随主便,但在主文化较弱而客文化较强的特殊环境下,则会产生相反的交际效果。

即反客为主.(王宏印,1995)。

中国文化无论是从历史角度上还是从经济角度上来讲,都是一个有着重要国际地位和影响力的文化。

所以在中国国内的外国友人,一般会对中国文化充满好奇,由此产生更多的客随主便的情况。

但同时国人的礼让的传统,则会同时十分照顾来客的家乡文化。

于是,餐桌变成了以中国文化为主,主客文化交替表演的舞台。
