Wine and spirits are not only objective physical existence but also a cultural symbol, that is the symbol of wine spirits. Chinese wine culture with richness in variety and character is irreplaceable part of Chinese history and culture accumulation. Chinese wine culture born with agriculture and evolve along the social and historical process. Earthshaking changes happened to the economic foundation, social environment and political system of China after the country entered modern times. Especially in 21st century, China, Chinese culture and Chinese wine culture are changing even more quickly in the trends of urbanization, internationalization and informatization. Through analysing social foundation and causes of Chinese wine culture, this paper trying to study the change of wine culture in modern China and draw its curren t situation.Keywords: Chinese wine culture; Modern; Change; Culture当代中国酒文化变迁摘要:中国酒文化历史悠久、源远流长。

中国酒类品种繁多,特色各异,是我国历史发展和文化沉淀过程中不可缺少的一环。
我国酒文化与农业文明一同诞生,随着社会历史进程的发展在不断的丰富和变化。
进入现代以后,中国社会从经济基础、社会环境到政治体制都发生了翻天覆地的变化,尤其是进入21世纪后,在城市化、国际化、信息化的浪潮中中国、中国文化以致中国酒文化也日新月异。
本文通过对中国酒文化形成和发展的社会基础以及发展原因的深入分析,试图描绘出中国当代酒文化的变迁轨迹以及现状。

Origin of Chinese Wine MakingThe most popular origins of Chinese wine making are YI DI and Du Kang. But they are both fairy tales with no real evidences. Archaeology and cultural relics we have uncovered produced that Chinese wine making started 6000 years ago, when agriculture began(Xu 12). At the time of the Great Yan and Huang Emperor, surplus grains were produced because of agriculture booming, which supplied raw materials for wine making. The invention of pottery made proper wine sets. Clans‘ settling down in primitive society made wine making possible in social. Human beings learned fermentation from the great nature and the ‗drucken ape‘, which helped people to make wine technically.The representative of Chinese wine should be the white spirit. Besides the white spirit, Chinese also make rice wine, grape wine. The raw materials of Chinese wine are mainly grains. The using of distiller‘s yeast is outstanding in the world. Chinese white spirit is famous as clear, bouquet, high alcohol and age.2. Origins of Chinese Wine CultureWhere history starts with, where should the process of thoughts start with.Chinese wine culture started together with Chinese traditional culture based on ancientagriculture. Chinese wine culture is one aspect of Chinese traditional culture and interact with other aspects. Confucianist and Taoist are the core of traditional culture of Chinese and Buddhist completed it. They influenced Chinese wine culture and can be recognized.Confucianist and wine etiquette and morals related to wine. Differ from western culture that driven by desire and purpose, Confucianist intended to create ideal individualities with good manners and moral. The emphasis of Confucianist is to balance relationships between people. Typical Confucianist wine etiquette is performed in a four-step drinking procedure, that is Bai(拜) Shi(酾)Cui(啐) Zu Jue (卒爵). Bai means to hold up cup and show respect. Shi means to pour some wine on the ground to show gratitude to the earth for feeding people. Cui means to sip and taste wine and praise the wine to make the host happy. Zu Jue means to end up with wine in the cup. The senior are obliged to start drink first and to leave first. (论语·乡党) Confucius‘ attitude towards drinking is to drink as much as one can before drunken. Confucianist also believes that people are not able to hold any sacrifice and ceremony without wine.Taoist and the spirit of Chinese wine culture. Taoist seeks for freedom and being immortal on body or spiritual. Drinking wine is one of their ways to be spiritual free. But alchemy is the main and most famous Taoist way to seek for being immortal. The first distillatory was proved to come into being in East Han dynasty in China(25~220). At that time the only possible application of that instrument was Taoist alchemy. Distillation makes it possible for people to get spirits from wine.Buddhism is unlike many other native religions in China on attitude towards wine, spirits or any alcoholic beverage. Buddhist prohibits adherents get in touch to any thing with alcohol. Five Prohibition, Eight Prohibition and Ten Prohibition all mentioned wine is forbidden. Eat poison rather than drink wine, jump into fire rather than let go desire. Agama the basic of ancient Buddhism set Five Prohibition that are no kill, no steal, no sexual misconduct, no lies, no wine. Buddhism believes that desire and lust will result in pain. Buddhist is against every thing that will cause desire and lust and intend to make a clean, harmonious world. To be frank, Buddhistobstructed the development of Chinese wine culture. It is the obstruction influenced Chinese wine culture.B. Chinese Wine Manners and Special Functions of Wine in Chinese Society1. Chinese Wine MannersWine is always related with important event, such as festival, ceremony, feast, wedding and even funeral. Chinese drink Tuan Nian wine on spring festival. Chinese drink Shou wine on occasion that some senior‘s birthday. Chinese new weddings drink He Cheng wine on their wedding night. Chinese parents invite relatives and friends to drink Man Yue wine when their baby was brought to this world for a month. Even Chinese whoremaster will drink Hua wine at the whore‘s place(Xu 68). Chinese always use wine to express their feelings. In China, it is proper to have some good food while drinking wine.Chinese suppose to be active while drinking in most occasions. Chinese have many table games. The most popular one is Jiu Ling. The game can be designed in many ways and the loser should finish certain wine on the table. It is often be played in gesture way. Another famous table game is Qu Shui Liu Shang(曲水流觞) This game evolved from an ancient custom. When the the third day of third month in Chinese calendar, people will get together along tortuous creek and put cups of wine in the water. People pick up one cup stops in front of him and drink. Chinese believe to be blessed by drinking the wine in the water.2. Function of Communicating of Chinese Wine CultureChinese people value the effects of drinking wine rather than wine itself. So there is a lack of attentions or managements of wine and spirits. Every social class can find its way to express itself and communicate with others. Hosts toast to welcome guests. Businessmen toast to make friends. Subordinates toast to ingratiate themselves to the boss. Wine is effective when being used to strengthen relationships in Chinese culture.Chinese wine and Chinese tea always appear in partnership. Wine and spirits are defined as hot, spicy, high toxicity and energetic in traditional Chinese medical science while tea is bitter and extremely cold, able to detoxify, able to clean inner body(Li Tea&wine). While Chinese people traditionally value health and balance very much, they usually have some tea after drinking wine. Wine makes people active and brave and tea make people sober and settle down. Chinese culture have developed and changed while the nation and its people aging.1.Economical Changes2.China has established industrial-based economy after the birth of people‘s republic of China. Agriculture-based economy had been history. Especially after the year of 1979 when Chinese leader Deng Xiaoping decide to carry out the reform and open up policy, the economy of China started booming up. By the year of 2012, China's GDP increased from 26.6 trillion yuan to 51.9 trillion yuan, and now ranks second in the world. Government revenue went up from 5.1 trillion yuan to 11.7 trillion yuan . Income of urban residents rose by an annual average of 8.8%, and the per capita net income of rural residents rose by 9.9%(Zhengfu).2. Social ChangesThe result of industrialization is urbanization. The presentation of Chinese strata have changed undoubtedly. There have been basic compositions of modern strata and the order of strata has been steady set. The modern strata circulating system has taken shape and replacing the former one(Lu 63-72). But the arrangement and circulatingsystem of Chinese strata is not equitable and rational. The middle class ranges far less space and the poor class ranges so much. The pattern of Chinese strata is pyramid but it should be olive shape to keep the whole society live in peace. Social wealth is under the control of the upper class on the top of pyramid which takes up less than 5% of the population. Social contradictions accumulating fast and huge.3. Political ChangesChinese communist party ruled government and politic, built the most powerful central authority in the history of China before 1980s. Chinese government and politic are able to all-around of matters in the whole country and entire society. China went into deadly silence with high pressure politics, plan-ruled economy and centralized ideology and culture. The party and government is almighty to control every corner of the entire country. But in the times of peace, people do not need almighty politics. So CCP started to reform and open up after the 1980s(Xie 24-26).B. Changes of Chinese Culture in Modern China under the Influences of Economy, Society and Politic1. Influences of EconomyOpen market economy has made China an international market. Chinese culture has become internationalization. The total volume of culture products and services trade is 16.64 billion dollars 2007 ,of which core culture products takes 12.92 billion dollars. It has grown two times bigger now. There have established 272 thousand business cultural industries in China and the figure keep growing fast(Culture report). China received 135 million entry visitors making an income of 48464 million. 70.25 million Chinese went out China. It was the year of 2011 and we can expect a bigger flow of tourists crossing the state borderline(Tourism report). Culture from all over the world flood into the nation of China. Chinese tourists bring back different styles of life. Foreign film, book, music and internet columns engaging with Chinese everyday.2. Influences of SocietyCivic culture in the procedure of urbanization is taking place of traditional clan culture. The core of civic culture is being citizen and the awareness of public life. People coming from different places no matter countryside or foreign country are living together in the same city. It will take great efforts and a long time to make people live in peace. Individualities and classes grinding-in to make a set of rules that most of city members will obey to settle conflicts. Because of the strata in Chinese society are firmly set and a lower class member could hardly go anywhere upper, there is a polarization in civic culture---hedonism of the rich and Diao Si(Bai du) culture of the poor and middle class. Modern Chinese civic culture mainly reads inequality between strata. The poor hate the rich but can hardly do anything to change the situation. So common people started to seek for ways to express their anger and release surviving pressure in cities. They ask for anti-intellectualism to prevent themselves from mocks and disdains from the elites. They name themselves Diao Si as self-mockery to ease themselves from hard pressures and struggles to make al living.3. Influences of PoliticsAnother notable feature of modern Chinese culture is the fever towards the authority. The reason has been showed before, that is the party and government have the absolute authority on the entire nation. People are scare of their authorities on one hand and eager to become one of the power class on the other hand.Media in China is firmly controlled in the hand of CCP an government. People demand the right of information and share opinions freely but normal medium are not serving common people. Thanks to the internet, Chinese people find a proper way to communicate and look for information they need. And the internet becomes the main streets for people to march and demonstrate. That is why foreigners always see different Chinese on the internet and normal media.As the reform and open up policy had become a basic state policy, communicationgovernmental and nongovernmental started to boom. A demand of higher wine and spirits quality urges wine makers to make wine and spirits with better taste, better looking and less harm to health.a. White SpiritsTake 2011 as example, the production of white spirits from Jan. To Dec. Is 10256000 kiloliter. Growth compared to the same is 30.7% which is 3.89 percent higher than the former. There are 1233 White spirits industries and enterprises by the end of 2011 with total wealth of 309.5 billion Yuan. The growth compared to the same is 34.65%. White spirits industry make 374.667 billion Yuan on its main business with a growth of 40.25%. The total profit is 57.16 billion Yuan. The price of high-end white spirits grow up fast in the latter half year, which make consumption went to products with middle prices from 200~600. At the same time, many good wine and spirits come into being in the market such as Shui Jing Fang, JianNan Chun and Fen Jiu.b. BeerThe production from Jan. To Dec. Of beer is 48988000 kiloliter with a growth of 10.67% compared to the same. The top three are Shan Dong, Guang Dong and He Nan, whose production reached 15586000 kiloliter taking 31.58% of the whole production. China has become the biggest consumer market in the world and still have huge potential consumptions. The consumer sales of beer take more than 57% in thetotal consumer sales of alcohol beverage. The concentration ratio of beer brands becomes higher. The leading status of Yan Jing, Tsing Tao, Snow is outstanding.c. Grape WineThe production from Jan. To Dec. Of grape wine is 115700 kiloliter with a 13% growth compared to the same. China has ranked fifth in grape wine consumption all over the world. According to the records of China Customs Office, the imports of grape wine is 36160 kiloliter with total worth of 1.393 billion dollars in 2011. Grape wine imported in bulk showed decline on total volume which indicates Chinese import market is changing from low-end consume to high-end consume. Faced with the high speed increase of Chinese grape wine industry, IWSR(international wine and spirits research) shows in its forecasting report of 2011~2016 that the Asian-Pacific area will be where alcohol beverage increasing with the fastest speed in the next five years, China will be the engine of global alcohol beverage consuming with a growth rate of 63.2%. According to the research of IWSR, the global total wine and spirits consumption will increase to 2.81~3.32 billion, of which 85.9% increase will be made by China and India(Sugar&Wine report 2011).2. Imported Distilled LiquorsWhiskeyThe word whisky(or whiskey) is an anglicisation of the Gaelic word uisce|uisge meaning water. Distilled alcohol was known in Latin as aqua vitae = "water of life".This was translated to Gaelic as Irish: uisce beatha and Scottish Gaelic: uisge beatha = "lively water" or "water of life".
