中国六大茶类的基本介绍中国是世界上茶叶品种最多的国家。

自上古时期诞生以来,几千年的历史长河中,历代古人创造了许多种茶类。

据不完全统计,仅我国现代生产的、有茶名的茶叶就有1100余种。

目前,得到国内外茶叶界广泛认同,在茶叶科学研究、生产及贸易中广泛应用的是我国著名茶学专家陈橼提出的“六大茶类分类”,即依据制作工艺及发酵程度的不同,将中国繁多的茶业品种分为绿茶、白茶、黄茶、青茶、红茶、黑茶六大类。

1、绿茶:在六大茶类中,绿茶是我国历史上出现最早的茶类,距今至少有三千多年。

茶圣陆羽在《茶经》中记载的那些唐代名茶,苏东坡、欧阳修、黄庭坚、宋徽宗、陆游等宋代文学家诗词文章中出现的茶,以现代制茶科学来认识均属于绿茶。

绿茶是我国产量和销量最大的茶类,全国有20多个产茶省(区)都生产绿茶。

绿茶属于不发酵茶,基本的工艺流程是杀青、揉捻、干燥三个关键步骤。

成品绿茶的色泽冲泡后的茶汤和叶底均以绿色为主调,较多地保留了鲜叶内的天然物质。

其中茶多酚咖啡因保留鲜叶的85%以上,叶绿素保留50%左右,维生素损失也较少,从而形成了绿茶“清汤绿叶,滋味收敛性强”的特点。

由于营养物质损失少,绿茶也对人体健康更为有益,对防衰老、防癌、抗癌、杀菌、消炎等均有特殊效果。

绿茶中的名茶主要有西湖龙井、洞庭碧螺春、黄山毛峰、信阳毛尖、庐山云雾、六安瓜片、太平猴魁等。

2、白茶是我国的特产,一般地区并不多见。

白茶属于微发酵茶,人们采摘细嫩、叶背多白茸毛的芽叶,加工时不炒不揉,晒干或用文火烘干,使白茸毛在茶的外表完整地保留下来这就是它呈白色的缘故。

优质成品茶毫色银白闪亮,素有“绿妆素裹”之美感,且芽头肥壮,汤色黄亮,滋味鲜醇,叶底嫩匀。

冲泡后品尝,滋味鲜醇可口,还能起到药理作用。

白自古以来便被赋予了“一年茶、三年药、七年宝”的美誉,中医药理证明,白茶性清凉,具有退热降火之功效,海外侨胞往往将白茶视为不可多得的珍品。

白茶中的名茶主要有白牡丹、贡眉、白毫银针、寿眉、福鼎白茶等。

黄茶的制作与绿茶有相似之处,不同点是多一道闷堆工序,这种闷堆渥黄工序,使黄茶具有“黄叶黄汤”的特点。

黄茶芽叶细嫩,显毫,香味鲜醇。

黄茶中富含茶多酚、氨基酸、可溶糖、维生素等丰富营养物质,对防治食道癌有明显功效。

此外,黄茶鲜叶中天然物质保留有85%以上,而这些物质对防癌、抗癌、杀菌、消炎均有特殊效果。

长炒青精制后称眉茶,成品的花色有珍眉、贡熙、雨茶、针眉、秀眉等,各具不同的品质特征。

如:珍眉:条索细紧挺直或其形如仕女之秀眉,色泽绿润起霜,香气高鲜,滋味浓爽,汤色、叶底绿微黄明亮;贡熙:是长炒青中的圆形茶,精制后称贡熙。

外形颗粒近似珠茶,圆叶底尚嫩匀;雨茶:原系由珠茶中分离出来的长形茶,现在雨茶大部分从眉茶中获取,外形条索细短、尚紧,色泽绿匀,香气纯正,滋味尚浓,汤色黄绿,叶底尚嫩匀;圆炒青:外形颗粒圆紧,因产地和采制方法不同,又分为平炒青、泉岗辉白和涌溪火青等。

平炒青:产于浙江嵊县、新昌、上虞等县。

因历史上毛茶集中绍兴平水镇精制和集散,成品茶外形细圆紧结似珍珠,故称“平水珠茶”或称平绿,毛茶则称平炒青;扁炒青:因产地和制法不同,主要分为龙井、旗枪、大方三种。

1、云南滇红产于滇西南云南大叶种茶树分布区,主产于凤庆,渤海等县。

其外形条索紧结,锋苗秀丽,金毫闪烁;内质汤色红艳,香馨味醇,叶底红亮,取名'金芽茶'。

其制作工艺流程:鲜叶(摊青叶)-挤揉、成型-通气发酵-毛火-解块、筛分、散热-足火-冷却-毛茶。

2、安徽祁红是祁门工夫红茶的简称,主要产于安徽的祁门县,是工夫红茶中的珍品。

外形条索紧细,锋苗挺秀,色泽乌润,汤色红艳透明,滋润鲜醇爽口,尤以香气高超,独具一格,还有蜜糖香,又似蕴藏苹果香,非其他红茶所能比,国外赞为'祁门香',被列为与印度的大吉岭和斯里兰卡的乌伐齐名的世界三大高香名茶之首。

3、广东英红茶产于英德市境内,故简称'英红'。

This type of tea is created by reprocessing the above varieties of tea into different tea products. Scented tea, medicinal and health teas, pressed tea, fruit tea, and instant tea and all examples of reprocessed tea.
Black Tea (Red Tea)
