中国六大茶类的基本介绍中国是世界上茶叶品种最多的国家。
自上古时期诞生以来，几千年的历史长河中，历代古人创造了许多种茶类。
据不完全统计，仅我国现代生产的、有茶名的茶叶就有1100余种。
目前，得到国内外茶叶界广泛认同，在茶叶科学研究、生产及贸易中广泛应用的是我国著名茶学专家陈橼提出的“六大茶类分类”，即依据制作工艺及发酵程度的不同，将中国繁多的茶业品种分为绿茶、白茶、黄茶、青茶、红茶、黑茶六大类。
1、绿茶：在六大茶类中，绿茶是我国历史上出现最早的茶类，距今至少有三千多年。
茶圣陆羽在《茶经》中记载的那些唐代名茶，苏东坡、欧阳修、黄庭坚、宋徽宗、陆游等宋代文学家诗词文章中出现的茶，以现代制茶科学来认识均属于绿茶。
绿茶是我国产量和销量最大的茶类，全国有20多个产茶省（区）都生产绿茶。
绿茶属于不发酵茶，基本的工艺流程是杀青、揉捻、干燥三个关键步骤。
成品绿茶的色泽冲泡后的茶汤和叶底均以绿色为主调，较多地保留了鲜叶内的天然物质。
其中茶多酚咖啡因保留鲜叶的85%以上，叶绿素保留50%左右，维生素损失也较少，从而形成了绿茶“清汤绿叶，滋味收敛性强”的特点。

白茶属于微发酵茶，人们采摘细嫩、叶背多白茸毛的芽叶，加工时不炒不揉，晒干或用文火烘干，使白茸毛在茶的外表完整地保留下来这就是它呈白色的缘故。
优质成品茶毫色银白闪亮，素有“绿妆素裹”之美感，且芽头肥壮，汤色黄亮，滋味鲜醇，叶底嫩匀。

黄茶的制作与绿茶有相似之处，不同点是多一道闷堆工序，这种闷堆渥黄工序，使黄茶具有“黄叶黄汤”的特点。
黄茶芽叶细嫩，显毫，香味鲜醇。
黄茶中富含茶多酚、氨基酸、可溶糖、维生素等丰富营养物质，对防治食道癌有明显功效。
此外，黄茶鲜叶中天然物质保留有85％以上，而这些物质对防癌、抗癌、杀菌、消炎均有特殊效果。

如：珍眉：条索细紧挺直或其形如仕女之秀眉，色泽绿润起霜，香气高鲜，滋味浓爽，汤色、叶底绿微黄明亮；贡熙：是长炒青中的圆形茶，精制后称贡熙。
外形颗粒近似珠茶，圆叶底尚嫩匀；雨茶：原系由珠茶中分离出来的长形茶，现在雨茶大部分从眉茶中获取，外形条索细短、尚紧，色泽绿匀，香气纯正，滋味尚浓，汤色黄绿，叶底尚嫩匀；圆炒青：外形颗粒圆紧，因产地和采制方法不同，又分为平炒青、泉岗辉白和涌溪火青等。
平炒青：产于浙江嵊县、新昌、上虞等县。
因历史上毛茶集中绍兴平水镇精制和集散，成品茶外形细圆紧结似珍珠，故称“平水珠茶”或称平绿，毛茶则称平炒青；扁炒青：因产地和制法不同，主要分为龙井、旗枪、大方三种。
