My mom and dad are really good cooks, so I get to eat lots of delicious home-cooked meals. But we also go out to restaurants sometimes for a special treat. There are so many awesome flavors to discover!Let me tell you about some of my favorite types of food and what I think about them. First up is Chinese cuisine - this is probably the food I eat the most often since it's my cultural background. I'm always so excited when my mom makes dumplings, noodles, or rice dishes at home. The flavors are so comforting and satisfying.One of my absolute favorite Chinese dishes is hot and sour soup. I love the blend of flavors - a little bit sour from the vinegar, a kick of heat from the chili, plus all those delicious veggies and mushrooms. My mom makes it really well with lots of tofu and shredded pork. Slurping up all the broth at the end is the best part!Another dish I could eat every day is yang zhou fried rice. My dad's version is out of this world, with eggs, ham, peas, carrots, and just the right amount of soy sauce. He gets the rice so light and fluffy. Birthday cake will forever be one of the best inventions!Lastly, let's talk about Japanese cuisine. I don't eat it quite as frequently as Chinese or Western food, but it's always such a treat when I do get to have it. Japanese dishes feel lighter and more delicate in flavor compared to the other cuisines.My number one Japanese food pick has to be sushi. I'm utterly obsessed! There are so many types of fish to pick from like tuna, salmon, yellowtail, plus all the different veggie rolls and toppings. My parents are worried I'll turn into a piece of sushi one day from eating it so much.Ramen is a close second favorite for me. That rich broth combined with the chewy noodles and toppings like boiled egg, chashu pork, and nori is just sublime. My mouth is watering now just thinking about it!I also love Japanese curry which has a thick, almost stew-like consistency. It goes perfectly over a big plate of rice. For some reason, the slightly sweet flavor really appeals to me compared to Indian curry which can be quite spicy.When it comes to Japanese appetizers and sides, I'm a huge fan of gyoza (pan-fried dumplings), edamame (boiled and saltedsoybeans), and yakitori (skewered and grilled chicken). That charcoal grilled flavor is just amazing.For dessert, I enjoy mochi ice cream where you get that stretchy rice dough exterior with an ice cream filling inside. Red bean paste in various pastries and sweets is another tasty traditional Japanese flavor.No matter the cuisine, I'm always eager to explore new dishes and taste combinations. I feel so lucky that my parents encourage me to have an open mind about different foods from all cultures. While I may have some personal favorites, I really appreciate the diversity of flavors out there in the world.Hopefully you've enjoyed reading my thoughts on Chinese, Western, and Japanese food! 中国国际地位的提高和经济的飞速发展使中国日益成为世界上集国际交往、商贸、旅游于一体的热点目的地。

中餐也随着文化交流更加国际化和商业化。

但是中餐的相关语言翻译问题也突出的摆在了我们面前。

问题貌似虽小,但使翻译内容更加规范化和合理化对提高我国餐饮行业的国际竞争力非常重要。

1、中餐翻译的相关问题
中国的烹饪艺术源远流长,各种菜系都融进了当地的传统文化因素。

中餐准确与简洁的翻译是中国传统文化向外国客人进行展示的绝佳机会。

这并非只是简单语言和语义的转化,更重要的是在进行文化层次上的更进一步转化。

当前中餐翻译主要围绕主料、烹制方法、形状口感及人名及地名开头以介绍菜品的方法,翻译随意性较强,不够严谨。

加之目前整个餐饮行业管理还较松散,行业协会还没有充分发挥监管作用,导致菜单翻译五花八门。

曾经出现过“四喜丸子”一度被译为“Four glad meatballs”(四个高兴的肉团),“宫保鸡”被译为:“Government abuse chicken”,如照英文其意思就变成了“政府虐待鸡”等令人啼笑皆非的现象。

这不但无益于外宾了解菜品,反而容易造成对中餐的错误理解,从而影响中外餐饮与文化的正常交流。

2、中餐翻译要点归纳
中餐翻译需要尽量简洁明了去表达菜系中丰富的文化内涵,在翻译中实属较难的工作种类。

酒店菜单的制作使空间有限,不能容纳过于罗嗦内容翻译。

“信、雅、达”作为翻译信条也同样适用于中餐翻译中。

不但准确还要求格调高雅,符合酒店的实际需要。

两个重要原则需要遵循:
2.1忠实、准确
中餐翻译需要对饮食文化有深入了解,在翻译过程中尽量体现其最主要的文化元素,体现其精髓,不让人产生误解甚至扭曲原意以影响就餐质量。

2.2文化烹调各元素兼顾
翻译时可根据情况直接点明菜品的主要原料及相关烹调方法,也可以用菜品的历史典故为题直接命名,另外辅以图片为说明性材料,能起到更好的效果。

3、中餐制作的翻译
3.1几种烹调方法的英文翻译
(1)煮(boiling):食物鲜嫩的主要方法。

可分为即食(instant boiling) 和快煮(quick boiling)两种。

(2)煨(simmering):以热水慢慢加热,时间较长。

(3)烧(braising):用少量油炖肉菜,使肉变棕色。

例如用酱油来烧,叫红烧braising with soy sauce。

(4)油炸(frying):北方人的常见烹饪方法,即将食物用热油炸。

frying又可分为:煎pan frying、炒stir frying、爆quick fry-ing 、炸deep frying、扒frying and simmering、回锅twice-cooked stir frying。

(5)蒸(steaming):将原料装入容器中拼摆造型进行蒸制的一种烹调方法。

(6)熏(smoking):用燃烧瓜果瓜皮所发出和气味来熏烤食物。

翻译时应首先弄清楚具体的烹调方法方可开始翻译。

望文生义和生搬硬套都是翻译的大忌。

比如:“红烧肉”和“干烧明虾”的“烧”字译法就不同,分别译为“Braised Pork with Brown Sauce ”和“Fried Prawns with Pepper Sauce”,一作烧,一作炒。

另外,“炒蛋”为“Scrambled Egg”,而不是想当然的“Fried Egg”。

烹调方法的不同选择对中餐的翻译尤为重要。

3.2刀功和用料翻译的翻译重点
中餐中的刀功是菜品质量的另一个重要保障,而备料过程中的原料切法尤为重要。

常用刀法英译如下:切片slicing,切丝shredding,捣烂mashing,切碎mincing,切丁dicing。

一些常用料的译法有:鱼片sliced fish,肉丝shredded meat,薯泥mashed potatoes,鸡丁diced chicken 等。

4、中餐翻译实用方法举例
中餐菜名的翻译建议直入主题,用简洁的语言将菜品直接特点翻译出来,反映菜品内容和特色的命名法是常见的有效方法。

下面简要介绍几种具体的翻译方法。

4.1方法内容直译
我国菜品的常用做法加上主要原料,如煎鸡蛋、炖牛肉等。

将所需制作方法直译,再配以该菜的主料为中心词。

例如:
炖牛肉 Stewed Beef
煎鸡蛋 Fried Eggs
红烧鱼Braised Fish with Brown Sauce
4.2直译解释结合
翻译时采用直译中文名称,再补充解释其含义。

例如
全家福:Happy Family-A combination of shrimps, pork, beef, chicken, lobster and mixed vegetables with brown sauce
4.3解释译法
(1)突出味汁的作用,以原料为中心词将烹法与原料一并列出。

例如:
鱼香肉丝Shredded Pork with Garlic Sauce
豆豉鳜鱼 Mandarin Fish in Black Bean Sauce
(2)作料以定语的形式修饰原料构成基本翻译形式。

例如:
咖喱鸡 Curry Chicken 麻辣豆腐 Spicy Bean Curd
(3)实虚对应法,即将高雅的中文喻名以平直的英语译出。

例如:白玉虾球 Crystal White Shrimp Balls
红烧狮子头 Braised Meat Balls with Brawn Sauce
4.4借用法
用西方人熟知的菜系或食品名来替代中餐菜名,这主要是利用菜品之间的相似之处使中餐菜名通俗易懂,便于理解。

例如:烤排骨 Barbecued Spare Ribs 鸡肉串 Teriyaki Chicken Stick
5、结语
中国饮食文化博大精深,在今天日新月异的社会,中餐文化也随着社会脚步处在迅速的变化中。

这就要求对其外文的翻译方法也必须要灵活运用,做到因地因材制宜,根据具体情况确定恰当的翻译方法。

应用效果的好坏是评判翻译质量的唯一标准。

只有重视对中餐的翻译质量与水平,提高我国餐饮行业的外向型竞争力,才能使餐饮企业更加适合国际化发展的要求。
