在征服自然、培养科学意识的过程中,西方人特别重视发展理性思维,行事力求符合自然界的客观规律,以个人为社会本位,以自我为中心,注重人格的尊严。

食物原料、烹调方法、食品的味道以及人们的饮食习惯受地域、气候、习俗还有些其他因素的影响,由此形成了各具特色的烹调方式。

此外,不同的饮食观念、方式、食物以及饮食的时间、地点,可以反映出在不同的历史背景、人文背景、社会状况及不同的环境下,不同的民族所形成的不同的性格。

早餐是睡醒后的第一餐,通常在清晨食用,如此一来,人们才能有足够的精力去处理一天繁重的工作。

中国人和英国人有一点相似处,就是他们都喜欢在早上吃很多的东西,他们认为早餐是一天中最重要的一餐,由此可见,早餐是最能反映两国文化差异的一顿饭。

本文主要就英国传统早餐和中国传统早餐进行调查,帮助人们通过饮食文化更好地了解西方人的处世哲学、思维方式以及价值观念,提高跨文化交际能力。

一、英国传统早餐莎士比亚曾经说过:“And then to breakfast,with what appetite you have.”由此可见,早餐是一天中最为重要的一顿,在英国,早餐的分量相对多于其他国家。

在周末或是一些特殊节日的早上,甚至当工作量繁重的时候,英国人常会来一份这样的传统早餐,他们认为,传统的早餐是开始一天的基础,因为传统早餐中含有丰富的蛋白质,可以为他们一天的工作提供能量。

摘要:西方饮食文化是西方文化中必不可缺的一部分,它既受西方文化的影响,同时又能反映出西方文化的特点。

通过对西方饮食文化的分析,可以洞察西方人的民族形体、民族心理和民族性格。

本文就英国传统早餐和中国传统早餐进行对比分析,突出中英两国的文化差异。

一、英国传统早餐
莎士比亚曾经说过:“And then to breakfast, with what appetite you have.”由此可见,早餐是一天中最为重要的一顿,在英国,早餐的分量相对多于其他国家。

在周末或是一些特殊节日的早上,甚至当工作量繁重的时候,英国人常会来一份这样的传统早餐,他们认为,传统的早餐是开始一天的基础,可以为他们一天的工作提供能量。

因此,较于如今全球盛行的快餐文化,传统英式早餐更能展示英国文化不同于他国。

英国的传统早餐通常由许多种食物组成,但其中最重要的两个成分是:培根和鸡蛋,除此之外还有香肠、野蘑菇、烤西红柿、炸土豆条、麦片粥、腌鲑鱼、黑布丁、烤面包等。

如今,人们怕早上使用大量的油炸食品会影响身体健康并导致肥胖,因而改用一些简单的食物,而这类简单的早餐叫做“大陆式早
餐”,其味道比较清淡,通常是没有鱼的,这种大陆式早餐如今已风靡英国。

二、中国传统早餐
中国的饮食文化悠远绵长。

受不同区域、气候、民族特性的影响,中国的饮食已形成了如今公认的鲁、川、苏、粤、闽、浙、湘、徽中国“八大菜系”。

中国各地早餐都具地域特色,且名称各异。

在尤金·N·安德森著的《中国食物》书中,他详细列举了中国各地早餐的例子:
鲁:济南派:稀饭。

胶东派:粥,配食小面食、油炸食品及点心。

孔府派:六个家常小炒,豆浆或咸糊糊,三四种点心。

山东的煎饼、火烧,咸菜。

川:酸辣粉,重庆的小面,武汉的热干面。

苏:包子、蒸饺、豆腐脑、油条、烧饼、徐州的辣汤。

粤:米粉、猪杂汤河米粉、肠粉、煎油饼、黄豆面、葱油饼、煎饼、早茶、虾饺、烧卖、叉烧包、糯米团子等。

除此之外,还有一些地方特色的早餐,如纳西族的丽江粑粑、酥油茶;蒙古族的马奶;维吾尔族的“乌马什”;藏族的斗麻。

三、中英饮食文化的差异
(一)饮食观念的差异
中英饮食文化的差异在饮食观念上体现出西方崇尚理性的概念,尤其是英国。

英国人视早餐为一天中最重要的一餐,因此,英式传统早餐是最具代表性的一餐,可以反映出西方与东方文化的不同之处。

英国人在摄取食物时,基本上是从营养的角度来考虑的,(陈歆,2008)他们不在意食物的色、香、味、形,而是注重每日所摄取的热量、维生素和蛋白质等营养成分。

“民以食为天”,这句谚语能明确说明,吃对中国人而言是非常重要的。

由上述提到的传统早餐来看,中国人将“吃”发挥到极致,使其不仅维持生存,也利用它维持健康。

在保持营养的基础上,中国人亦将饮食登峰造极,追求达到色香味俱全。

(二)饮食内容的差异
几千年以来,中国生产水平都处于低下状态,并且中国农民还身负重税,正因为人们总是吃不饱,所以才会有把吃看得重于一切的饮食文化。

中国传统早餐以素食居多,这不仅有肉价贵的问题,还有佛教信仰的原因,而常食素菜的人,多数比较爱好和平,不喜争斗,也略显懦弱怕事。

根据饮食对象的不同,可以把中国人称为“植物性格”(张从益,2004),食素为主的民族通常是温和的,固本守己,不愿远离自己的家乡,中国人能知足常乐,与自然相处和谐,也许就是这个原因吧。

(三)饮食餐具的差异
在中国等东方国家,人们通常都使用筷子,而西方国家的人,则更喜欢用刀叉。

在社会文化的发展中,筷子和刀叉是一种特殊的文化符号,它们各具自己的特色,分别代表东方和西方的文化(张吴湖,2006)。

中英两国的食具代表着不同的理念,中国人用的筷子是木制圆状,
这生动地表明,自然界和人类是一个和谐的整体。

而英国人所用的刀叉,均都是金属所制的,这意味着自工业革命后,科学技术得到迅速发展。

(四)饮食时间及地点的差异
就早餐的使用时间及地点而言,也可以反映中国人和英国人的个性上有着巨大的差别。

中国人通常都是在洗漱完毕、衣着整齐之后才上桌吃。

他们通常会认为在床上吃早餐有失体面,且会有残渣掉到床上,使周身的环境肮脏。

人们把这样的生活同畜生联系起来,如“猪窝生活”。

这可以反映出中国人讲究面子的性格。

与之相对,英国人在周末不需要上班时,通常会在床上享受他们的早餐时间。

早餐会被端到床上享用,并且在享用之后,很可能再睡个回笼觉。

这个反映出英国人在生活的一些细节上比较随意,并且比较亲近自然。
