食材每日空运让竞对模仿不来“虾塘”刚开业时生意异常火爆,每天至少要排七八十号,除了前赴后继的食客,模仿者也不断涌来,但随着时间推移,真正长久经营下来的只有“虾塘”一家。
罗氏沼虾喜温热,专业养殖场多设在珠三角地区,为了拿到最优质的原料,芦翾决定每天都从广州空运,为保证食材落地后依然鲜活,其间要将虾放入箱子,倒进冰块并充上氧气,运输途中折损的虾一概不要,确保每一只都是活的。
