孔府有一种与火不接触 的独特自烤菜,即烤花 揽桂鱼:把炮制干净的 桂鱼调味、造型后, 网 油,再包面饼,把鱼包 封严密,放在铁钩上, 下用木炭火两面烤熟, 其鲜味不失,色白而嫩。 食者知其味,不知其法, 曾是孔府秘不外传的名 菜制法。 主料:鳜鱼

乔羽谈甏肉干饭
谈起家乡的小吃,乔羽是如数家珍,“好吃的东西太多了,看你的饭量了, 热豆腐、甏肉干饭、筒子鸡、胡辣汤、南阳湖的鸭子、四鼻孔鲤鱼,我最爱吃热 豆腐。” 乔羽说,家乡的甏肉干饭非常地好吃,但是小时候很少能吃到,吃甏 肉干饭的人家都比较富裕,一般的百姓很少能吃到,当时,乔羽的家境一般,所 以平时很少能吃到,现在一听到甏肉干饭,还是一样感觉非常地香。

1.挂霜是山东菜独特的传统烹调技法之一,挂霜丸子又称为“糖酥 丸子”。此菜之妙在于挂霜,所谓挂霜,是指在原料外表,挂上一层似 粉似霜的白糖,霜也就是指糖经过水炒,使其又还原为白色。 2.此菜霜白如雪,外皮焦酥香甜,内软嫩鲜美,是宴席中的甜菜佳 品。

“九转大肠”出于清光绪初年,由济南“九华楼”酒店首创, 九华楼是济南富商杜氏和邰氏所开。杜氏是一巨商,在济南 设有9家店铺,酒店是其中之一。这位掌柜对“九”字有着 特殊的爱好,什么都要取个九数,因此他所开的店铺字号都 冠以“九”字。“九华楼”设在济南县东巷北首,规模不大, 但司厨都是名师高手,对烹制猪下货菜更是讲究,“红烧大 肠”(九转大肠的前名)就很出名,做法也别具一格:下料狠, 用料全,五味俱有,制作时先煮、再炸、后烧,出勺入锅反 复数次,直到烧煨至熟。所用调料有名贵的中药砂仁、肉桂、 豆蔻,还有山东的辛辣品:大葱、大姜、大蒜以及料酒、清 汤、香油等。口味甜、酸、苦、辣、咸兼有,烧成后再撒上 芫荽(香菜)末,增添了清香之味,盛入盘中红润透亮,肥而 不腻。有一次杜氏宴客,酒席上了此菜,众人品尝这个佳肴 都赞不绝口。有一文士说,如此佳肴当取美名,杜表示欢迎。 这个客人一方面为迎合店主喜“九”之癖,另外,也是赞美 高厨的手艺,当即取名“九转大肠”,同座都问何典?他说 道家善炼丹,有“九转仙丹”之名,吃此美肴,如服“九 转”,可与仙丹媲美,举桌都为之叫绝。从此,“九转大肠” 之名声誉日盛,流传至今。

相传始于孔子 七十四代孙孔 繁坡时期,在 孔繁坡任山西 同州知府时, 府内厨师以鸭 子出骨,加调 料入碗加盖, 上笼蒸制而成, 肉质酥烂,香 气浓郁,滋味 鲜美,孔繁坡 品尝后,觉得 此菜制法与众 不同,上笼蒸 制以点香三炷 烧尽为度,滋 味鲆美美胜于 它菜,故取名 为神仙鸭子。
