特重饮食的文明
以青铜作为主要生产工具之时代被称为青铜时代，由此衍生出来的文化被称为青铜文化。虽苏美等其他古文明也有青铜文化，某些现象甚或早于我国，但我国青铜文化自有特色，饮食即为其中之一。
古人虽然有皇帝“鼎湖龙驭”的故事，似乎皇帝已知铸鼎，但《墨子•耕耘》有云“昔者夏启……采金于山川，而陶铸之于昆吾”，现在学术界普遍认为铸铜的盛行是从夏朝开始的；夏禹铸九鼎之传说尤为世人所重。但此即应注意：墨子说铸铜时用的语词是采“金”。中国古代称金就是指铜，而非金银之金。这便与其它文明迥然不同。古埃及、古希腊、苏美文化均有大量金银器，唯中国用金极少也较晚，金的雕饰制作要到春秋战国才较发达，在殷周称为吉金的，都是铜。
采金铸器的过程，先是用被称为纯铜的红铜。再而加入锡，形成锡金合金，是为青铜。青铜器可概分为礼器（如鼎彝）、乐器（如钟铙）、兵器（如戈矛）、车器（如銮轴）、农工器（如刀铲）、杂器等之类。但有趣的是，所谓礼器，大抵是食器。而这也与其它文明不同。
禹铸九鼎的“鼎”就是主要的食器。直到现在，闽南语称锅子仍叫鼎。而鼎却又是政权的象征，争政权就叫做“问鼎”。入朝做官跟宁愿退隐江湖的人相比，则称为“钟鼎山林、人各有志”。有钱的大户可以用旁的形容词去描述，“鼎食人家”却只能指有政治势力的世家。鼎这种食器为何竟有如此重大的政治及权力意涵呢？礼器为何又多是食器呢？须知兵器车器农器工器都不可能用为礼器，只有食器可以。何以食器有此地位？
答案不难索解。《礼记．礼运》早已讲过：“礼之初，始诸饮食”，又说：“礼必本于天，动而之地，列而之事，变而从时，协于分艺。其居人也曰养，其行之以货力辞让：饮食、冠、婚、丧、祭、射、御、朝聘”。古人的观念认为：人要生存就需脱离竞争抢夺资源的状况，以“货力辞让”来安排分配之，此即礼之所由起也。觅食求生是古时最基本的问题，故礼亦起于会餐分食之顷。由饮食乃有生命；有生命乃能长大成人，而遂有冠有婚有丧；有个人而后亦有群体，群体间乃需有祭射御朝聘等礼以 “协于分艺”，才能形成一个彬彬有礼的社会。这是后世儒者对礼的发展及其内涵之解释。但亦唯有如此解释，才能说明礼器与食器混同的现象，也才能表征出中国政治学为何会以 “养”为内涵的特点。
