说起这两款黑咖啡的区别,其实很简单,说白了SHORT BLACK就是蒸汽咖啡机直接流出来的浓缩精华,而LONG BLACK不过是SHORT BLACK加热水而已,不过做法不像我说的这么简单。

1. 美式:先espresso再加水, 使得水会把espresso的油脂crema沖散冲淡
2. long black: 用一杯装著热水的杯子去接espresso, 使得油脂比较少的被水溶解,咖啡油脂的保留比美式好.
3. lungo: 俺最常用, 可以说是用espresso硬接满一大杯, 但热萃取时间太长会影响风味,所以通常会磨粗点,让萃取加快,缩短时间,lungo接出来的咖啡,是这三个中,油脂最豐富的,

关于咖啡的起源有种种不同的传说。其中最普遍且为大众 所乐道的是牧羊人的故事。传说有一位牧羊人,在牧羊的时候, 偶尔发现他的羊蹦蹦跳跳手舞足蹈,仔细一看,原来羊是吃了 一种红色的果子才导致举止滑稽怪异。他试着采了一些这红色 果子回去熬煮,没想到满室芳香,熬成的汁液喝下去以后更是 精神振奋、神清气爽,从此这种果实被作为一种提神醒脑的饮 料,且饱受好评。

在英语的世界里,Latte 则已是Coffee Latte 的简称,泛指由热鲜奶所冲泡的咖啡。

而法语单词lait 与意大利语单词latte 同义,都是指牛奶。

Caffè Latte ,就是所谓加了牛奶的咖啡,通常直接音译为―拿铁咖啡‖甚至―拿铁‖或―那提‖。

至于法文的Cafe au Lait 就是咖啡加牛奶,一般人则称为―咖啡欧蕾‖、或是―欧蕾咖啡‖。

直到1980年代,拿铁咖啡一词才在意大利境外使用。

一般的拿铁咖啡的成分是三分之一的意式浓缩咖啡Espresso加三分之二的鲜奶,一般不加入奶泡。

起 源
“咖啡”(Coffee)(一词源自埃塞俄比亚的一个名叫卡法 (kaffa)的小镇,在希腊语中“Kaweh”的意思是“力量与 热情”。咖啡与茶叶、可可并称为世界三大饮料。咖啡树 是属茜草科常绿小乔木,日常饮用的咖啡是用咖啡豆配合 各种不同的烹煮器具制作出来的,而咖啡豆就是指咖啡树 果实内之果仁,再用适当的烘焙方法烘焙而成。
如同酒精和香烟的陶醉感和刺激感一样,咖啡因具有兴奋剂作用。 咖啡因可刺激 中枢神经和肌肉,因而具有缓解肌肉疲劳、控制睡眠、激发头脑的功能。一方面 提高心脏机能,扩张血管,促进血流循环,镇静止头痛,使人感到清爽。
另一方面,可刺激交感神经,使副交感神经兴奋引起的阵发性呼吸困难得到控制。 咖啡还有助消化作用,特别在吃多了肉类的时候,使胃液分泌旺盛,促进消化, 减轻胃的负担。因为咖啡因有分解脂肪的功效,所以吃过高热量的食物后,必须 要喝些咖啡。
