西方去饭店吃饭一般都要事先 预约,在预约时,有几点要特 别注意说清楚,首先要说明人 数和时间,其次要表明是否要 吸烟区或视野良好的座位。 就坐后可以不急于点菜,有什 么问题可以直接问服务生,他 们一般都非常乐意回答你提出 的任何问题呢,若他们不是很 清楚会问询餐厅经理或主厨。

03 优雅用餐
• 吃面包一般掰成小块送入口中,不要拿着整块面包去咬。抹黄油 和果酱时也要先将面包掰成小块再抹。
• 吃东西时要闭嘴咀嚼,不要舔嘴唇或咂嘴发出声音,喝汤也不可 以发出吸的声音。如汤菜过热,可待稍凉后再吃,不要用嘴吹。

02 使用刀叉
一般情况下左手持叉,右手持刀;使用 刀时,刀刃不可向外。
进餐中放下刀叉时应摆成“八”字型, 分别放在餐盘边上。刀刃朝向自身,表 示还要继续吃。
每吃完一道菜,将刀叉并拢放在盘中, 表示侍者可以将餐具撤走。
如果是谈话,可以拿着刀叉,无需放下 。不用刀时,可用右手持叉,但若需要 做手势时,就应放下刀叉。

3、喝酒的方法。喝酒时绝对不能吸着喝,而是倾斜酒杯,像是将酒放 在舌头上似的喝。轻轻摇动酒杯让酒与空气接触以增加酒味的醇香,但 不要猛烈遥晃杯子。此外,一饮而尽,边喝边透过酒杯看人,都是失礼 的行为。不要用手指擦杯沿上的口红印,用面巾纸擦较好。 西餐品酒三部曲 品酒要用眼、鼻和口来监别酒液的色、香与味。简单来说,品酒可分为 以下三个主要步骤: 先用眼睛观赏酒液的颜色。 选定餐酒后,侍应会先将酒奉上,给你核对瓶上的标签,以确认餐酒品 牌无误后,就会先倒少许酒液于杯内给你试饮,若你对酒质口味感到满 意,侍应便会继续添酒。 试酒前,先要微微举起酒杯,轻轻打圈摇晃,先欣赏酒液的「挂杯」情 况,再于灯光下观赏其色泽,并要留意酒中是否清澈无杂质。 用眼观赏过后,就要用鼻子去感受酒香。 先握紧杯脚,将酒杯轻轻打圈,让红酒在杯内晃动,跟大量空气接触, 释放香气,然后将酒杯凑近鼻子,慢慢享受酒香。只要你多试几次,慢 慢就能分辨出酒液中的果味、木味、花味、泥土味以及橡木味,亦可凭 味道分辨出酒的级数。 呷一口酒,让酒香在口腔中慢慢释放散开。 忌"咕噜咕噜"的吞下去,应先呷一口,让味蕾感受酒的味道,然后才慢 慢吞下。

The Soup Course Dinner usually begins with soup. The largest spoon at your place is the soup spoon. It will be beside your plate at the right-hand side.
Dessert Eating something sweet for dessert is not a Chinese custom. Sweet things can be found hidden among everything else on a Chinese menu. Fruit salads and caramel covered apple are Chinese sweet dishes that are popular with Westerners.

Manners in China
Spitting Out the Bones In China it is common to spit things out on the table or the floor. Often food has small pieces of bone or other inedible parts that need to be removed from the mouth. Using chopsticks, a hand or a tissue is a polite way around the problem.
The order of dishes in China The meal usually begins with a set of at least four cold dishes, to be followed by the main courses of hot meat and vegetable dishes. Soup then will be served to be followed by staple food ranging from rice, noodles to dumplings. If you wish to have your rice to go with other dishes, you should say so in good time, for most of the Chinese choose to have the staple food at last or have none of them at all.
Manners in the West
As soon as the hostess picks up her napkin, pick yours up and lay it on your lap. Sometimes a roll of bread is wrapped in it; if so, toke it our and put it on your side plate.
Helping Yourself and Refusing If a servant passes food around, he will pass the dish in at your left hand so that you can conveniently serve yourself with your right hand. Never serve yourself while the dish is on your right; it is then the turn of your neighbor on the right. It is polite to take some of everything that is passed to you. But if there is something you may not like, you may quietly say: "No thank you."
Drinking
Beer is very popular in China, but it is all very similar with none of the stronger or darker varieties brewed in the West. The other popular alcoholic drink is rice wine. Beware, this can be very strong .In China, drinking alcohol is still mainly a male custom.Male guests are routinely offered alcohol and cigarettes at meal times. Just politely refuse if you don’t want them. An empty glass is always refilled, no matter about protests that the guest has had enough, as a mark of politeness or good will.
