人们常常用肉类进补,其实,肉类不仅蛋白质不如豆类多,而且也是各种食物中最缺乏维生素和矿物质的。

,豌豆、小麦、燕麦所含的铁是牛肉的两倍,几乎每样植物中的铁质都比肉类高;肉类的钙质也不如素食多:每百克食物中所含的钙质,鸡肉为5(毫克),牛肉为8,猪肉为12,鱼为30,豌豆为71,香菇为125,木耳为207,紫菜为850……中国人普遍缺钙,或因爱吃肉而致钙磷比例失调。

长寿是素食者不缺营养的最好证明。

我们可以不举英国的数字,就举中国自己的真正的素食者吧。

有一个美国医学组织要对素食进行对比研究,肉食组好找极了,而要找到纯粹的素食者并不太容易。

于是他们到了中国的寺庙里,到了四川和湖南偏僻的寺庙里,一问不要紧,吓了他们一大跳,那些老和尚,那些作为对照组的老和尚都多大年龄?平均八十多岁,年近90岁。

西方人自己也早就默认素食的人是长寿者,在英国等国家,肉食者和吸烟者、危险行业从业者一样,属于多付保险费的那一类。

素食者因为自己更不容易死而为自己节省了小小的一笔。

(二)素食者更强健肉食者有劲,素食者文弱,这种俗见可能有几千年了。

实际的情况恐怕会让所有自认比素食者有劲的肉食者人大吃一惊(素食者并不会吃惊的,他们早就知道他们比肉食者更有劲)随着时代的高速发展,素食主义者不断壮大,越来越多的人加入到了素食主义者的行列。

素食主义者人大体上分三类:一类是宗教信仰,圣经上说,上帝创世时给人的食物是纯素的,吃素是宗教的原则;一类是健康要求“三高”人群对饮食的苛刻要求让许多人选择了素食;另一类由于生活习惯和个人喜好偏爱素食。

不论是宗教信仰还是特殊的健康要求,事实上素食主义人群的不断增大让人们对素食的营养产生了越来越多的疑问,健康是人人所追求的,素食主义是利大于弊还是弊大于利呢?分析一下素食营养的特点:素食营养包含各种谷类、豆类制品、水果、蔬菜,是比较全面的营养,尤其是糙米、黑麦馒头、全麦面包,可供给足够的B族维生素和矿物质以及膳食纤维。

僧人吃素比较简单,青菜,豆腐,水果概括,我们一般人如果也按照这样的吃法是不可行的。

和尚不养儿育女,不做太多的事,只是修身养性,静默打坐,所以食物中的营养及其热量能够满足他们的身体需求。

但是这样的吃法按照一般人中是不会满足我们日常生活的营养和能量的需求。

由于我们日常活动丰富,所需的热量和蛋白质就多,因此素食的品种也会更多。

所以我们的素食必须包括更多种的食物:糙米、全麦、红豆、绿豆、花生、花生酱、黄豆制品……,加上各种蔬菜、水果。

再加上牛奶及蛋,以补充额外的蛋白质,并补充铁质,钙质来保持营养的平衡与充足。

素食的好处:素食由各种主食以及蔬菜和水果组成。

各种蔬菜和水果中都含有大量的维生素和矿物质。

素食主要有三大特点:1、维生素多。

维生素C能强化人体的免疫系统,维生素A能低抗传染病,是身体皮肤、眼睛、呼吸器官、消化器官、尿泌管道等第一防线所必须的抗体,维生素B有补充脑神经系统及联络网的免疫功能。

2、含纤维素多。

纤维素是人类的又一大发现,我们称之为第七大营养素,纤维素对人体有许多好处:(1)有助于控制体重,不会发胖,又活力充沛。

(2)能减少消化过程中对脂肪的吸收。

(3)可以降低血液中与心脏病有密切关系的脂肪,如胆固醇、三酸甘油脂等的含量。

(4)可以降低人体对胰岛素的需要,有益于糖尿病及其它病患,。

(5)本质粗糙,可以稀释大肠中的致癌物质,连带其它杂物,一齐推出体外,因此能防止肠癌的形成。

(6)纤维素增加,血压就会降低。

根据专家的研究发现多吃带纤维素的蔬食,能预防心脏病、糖尿病、癌症等。

3、含丰富的矿物质。

蔬菜和水果含有大量的矿物质是碱性食品,从而使血液变微碱性,利于疲劳的恢复促进身体健康。

的确,植物性食物如谷类、豆类、蔬菜、瓜果只要合理搭配,基本上可以提供人体所需要的各种营养素,但一点荤腥都不吃则是弊大于利。

这里所说的“基本上”并不是“根本上”,植物性食物蛋白质的消化吸收率普遍低于动物性蛋白,而且素食中的人体必需氨基酸、脂肪酸,某些脂溶性维生素,钙、铁等矿物质,某些微量元素,一般也低于动物性食物。

长期素食可能导致人体这些营养素的缺乏,这对处于生长发育期的幼年儿童和青少年以及老年人特别不利。

例如赖氨酸的缺乏可使人体质减弱甚至发育不良。

有些贫困山区的孩子,因为长期营养不良致使大脑发育不健全而出现智力障碍。

其中最重要的原因是食物中缺少必需脂肪酸,例如二十碳五烯酸(EPA)和二十二碳六烯酸(DHA),它们属于ω -3系列不饱和脂肪酸,富含在鱼油鱼脑中。

当人体内缺少DHA时,我们的细胞膜就变得死板、僵硬。

大脑行使正常信息交流功能,是以细胞之间构成广泛突触连接为基础的,这恰恰需要细胞膜具有良好的柔顺性、流动性。

可以说DHA是构成突触信息交流的不可或缺的建筑材料,所以有人给他起了个颇为世俗的商品名“脑黄金”。

而吃不到鱼的少年儿童可能智商低下,由此可见长期素食后果是多么严重。

有人说“吃,决定命运”,这非常有道理。

实际上,人类所有古代文明的发祥地都是位于能捕获到鱼的近水区域,可以说“吃鱼的民族是聪明的民族”,人类就是从吃鱼开始了进化上的飞跃。

此外,鱼肉蛋白较畜肉蛋白、乳蛋白、禽肉蛋白更易被我们人体消化吸收。

世界卫生组织(WHO)早已将鱼列为十种健康食品之一,我们没必要花很多钱去买“脑黄金”,每星期吃三次鱼、每次吃二两就足够了。

考虑到有可能的水域污染,有条件时以吃深海鱼为最佳。

其中又以体型较小的鱼为首选,因大型鱼例如金枪鱼、鲨鱼等位于海洋食物链的顶端,其体内可能积聚较多量的汞、铅、镉等有害重金属和滴滴涕、多氯联苯等极难降解的有机杀虫剂,还是少吃为好。
