上海美食菜名翻译与规范内容摘要:上海世博会将于2010年举行,可是上海宾馆饭店的双语菜单还存在不少问题,有待提高。

本文从西菜和上海菜比较的角度,来探讨上海菜的英译与规范。

关键词:上海菜菜单世博会据估计,2010年上海世博会期间,来自世界和全国各地的来宾将达到7000多万人左右。

为满足这巨大的世博需求,上海须拿出自己的特色菜肴来招待海内外的宾朋,以展示海纳百川的“美食之都”。

为满足海外消费者的需要,上海世博双语菜谱的推出必不可少。

笔者发现在上海涉外旅游定点餐馆中均配有中英文菜单,有的老字号餐馆的菜单上,甚至注明他们曾接待过西方大国的元首。

可是经过细细阅览,还是发现了不少问题。

不规范、不正确的翻译不但影响到国外友人在中国的餐饮消费,更甚者还关系到城市和国家的整体形象。

上海美食的双语菜单翻译值得在此探讨一番。

菜单汉英翻译存在的问题(一)拼写混乱拼写错误是菜单翻译中最为常见、也是最容易被忽视的一个问题。

一家老字号餐馆这样翻译下面三道菜:花菇扣鹅掌Coose Web with Mashrooms,清蒸大鲮鲆Setamed Turbot,桂花拉糕Sweet Osmanthns Cake。

正确的拼写分别是Goose Web with Mushrooms,Steamed Turbot 和Sweet Osmanthus Cake。

这样的低级错误在这家餐馆的菜单上至少有三十处左右,海外游客看到这样的菜单定会感到茫然或误解,不利于我国餐饮文化的对外传播。

(二)大小写误用菜单上的英文菜名大小写的规则一般是实义词首字母要大写,虚词(如介词)要小写。

但违反这个规则的现象比比皆是。

以下这些英文菜名均摘自某家涉外宾馆里的双语菜单:山椒牛肉丝Sautéed Shredded Beef With Chili Sauce 和黑椒牛仔骨Beef ribs with black pepper。

前者介词with 首字母应小写,后者实义词ribs、black和pepper 这三个单词首字母应大写。

浅议上海菜肴名称的翻译
摘要:上海菜肴是中华饮食文化的重要组成部分,其名称是人们最先接触到的直接载体。

菜名既反映了菜肴的制作手艺和原料口味,也蕴含了上海的历史文化和风土人情。

本文试图从纽马克的语义翻译和交际翻译理论出发,探寻上海菜肴名称的翻译方法,以供翻译人员和餐饮工作者等相关人士作为借鉴。

中华饮食文化源远流长,博大精深。

而上海作为我国最大的经济中心城市,其菜肴吸取众家之长,广纳百川特色。

要想品尝上海美食,欣赏国际大都市的万种风情,首先呈现在人们面前的就是菜肴的名称。

准确形象地把上海菜肴翻译成英语,不仅可以让外国人对菜肴的材料、口味和烹饪技法有所了解,还能传达其背后丰富的民俗情趣和文化内涵。

本文结合了著名翻译家彼特·纽马克的语义翻译和交际翻译理论,对上海菜肴的名称英译作了初步探讨。

一、语义翻译和交际翻译
1981年,英国翻译家彼特·纽马克在其著作《翻译问题探讨》[1]中首先提出了语义翻译和交际翻译的概念。

语义翻译要求译文尽可能地以词、短语和分句为基本翻译单位,在结构和词序安排上紧贴原文。

而交际翻译允许译者重新组织语言结构,有较大的自由度去解释原文,调整原文,甚至修正原文的错误,注重语境含义的传达。

简单来说,语义翻译以作者为中心,而交际翻译以读者为中心,将原作中的思想和文化元素以更适合读者的形式表现出来;前
者偏向源语,后者偏向目的语。

[2]11-12两者之间虽有差别,但往往是重合的,是在翻译活动中相互交叉、相辅相成的两种方法。

二、上海菜肴的命名特点
上海的菜肴博采众长,绚丽多姿,包括“本帮”与“海派”两类。

本帮菜起源于邻近的地方风味,比如苏州、无锡、扬州、宁波等。

而海派菜可以追溯到清末上海开埠。

一百多年来,各地饮食汇集上海,形成了兼收并蓄的海派饮食风格,对中华饮食做出了不可磨灭的贡献。

据统计,1930年,上海一家菜馆的菜单就有580多款。

[3]上海菜肴的命名方式多种多样。

大体上可分为两类。

第一类的命名方式比较普遍。

从名字上可以得知菜肴的组成元素,如原料、烹饪技法、色香味形、创始人和发源地等。

第二类的命名方式更加艺术化,或套用诗词典故,或反映风俗情趣,或来自历史传说,或源于商业噱头,较少或没有表达出菜肴的元素。

三、上海菜名的翻译
对于第一类的菜名,多用语义翻译,让人对菜肴的成分和营养一目了然;对于第二类的菜名,可以采用交际翻译的方法,也可以使用语义翻译或语义翻译配上解释的方法,传达菜名特有的上海风情。

下面介绍了几种具体的翻译方法,其中(1)-(6)为语义翻译,必要时可加上解释;(7)、(8)为交际翻译。

(1)以主料开头:主料+主料/配料/汤汁。

[4]这类菜名的组成元素为使用的材料。

翻译时可直接按原文译出,对词序进行稍许变动。

如果有两种或两种以上材料,一般用介词with连接配料,in
连接汤汁。

如三鲜馄饨(wonton with three delicacies)。

(2)以烹饪技法开头:烹饪技法+主料+配料/汤汁。

这类菜名在(1)的基础上,加入了烹饪技法的组成元素。

常见烹饪技法有:炒(to fry)、红烧(to braise in soy sauce)、烤(to roast)、熏(to smoke)、煎(to pan fry)、五香(to season/spice)等。

在翻译过程中,通常采取烹饪技法的过去分词形式。

如红烧划水(braised grass carp tail with brown sauce)。

(3)以形状或口感开头:形状/口感+烹饪方法+主料+配料/汤汁。

这类菜名是在(2)的基础上,加入了色香味状的组成元素,如脆皮鸡(crispy chicken)。

表示材料形状的单词有:片(slices)、条(strips)、丝(shreds)、丁(dices)、末(mince)、蓉/泥(mash)等。

在翻译过程中,可以采取这些词的被动语态。

如鸡丁(diced chicken)、土豆泥(mashed potato)、牛肉末(minced beef)。

也可以采取名词形式,如鱼柳(fish fillet)、猪肉丝(pork shreds)、鸡丁(chicken cubes)。

(4)在前三点的基础上,加入人名或地名的元素。

每逢过年,崇明糕是上海人必吃的食品之一。

崇明糕可译为chongming cake。

南翔小笼可译为baozi stuffed with juicy pork, nanxiang style。

(5)音译法。

上海的小吃历史悠久,文化含义丰富。

翻译时可以保留其汉语发音,必要时可以加上对其原料及文化信息的解释。

例如,烧卖译为shaomai(steamed pork dumplings)。

(6)保留原义法。

对于字面无法体现其组合元素的菜名,可采用保留原义的翻译方法,必要时加以注释。

“八宝鸭”是上海人的一道节庆大菜。

八宝鸭可译为eight-treasure duck。

老虎脚爪源于江苏盐城,在小缸炉里烘制而成,形似老虎的脚爪,可以译为tiger paw。

(7)转移语义法。

对于第二类菜名,除保留原义法外,还可以使用交际翻译,转移其语义,译出菜肴的组成元素。

青鱼秃肺是上海的一道传统菜肴,其中的肺实指鱼肝,译为sautéed black carp livers。

(8)借用法。

有些菜可以用西方人熟悉的相似的西方菜名,或者原来的英语本名来翻译。

即借用英文现有的词语来翻译。

罗宋汤是的一道上海化的俄国菜。

有人将其误译为the soup of song。

其实“罗宋”是从russian soup音译而来的,应回译为russian soup,或借用俄式菜名,译为russian borscht。

值得注意的是,翻译方法的选取是因地制宜,适时适地的。

根据时间、地点、对象文化水平和接受程度等因素,同一道菜可以采用不同的翻译方法。

例如,由于文化背景的不同,翻译中很多文化元素是不可译的。

但是随着国际交流加深,不可译的程度也在慢慢下降。

语义翻译越来越多,如麻婆豆腐(mapo tofu)、包子(baozi)等。

外国人对这些菜名越来越熟悉,无需额外解释。

在不同的饭店,一道菜的译法也可能不同。

比如金玉满堂按照(6)的保留原义法,可译为hall full of gold and jades。

金玉
在中国传统文化中象征财富和学识,外国人可能不容易看懂。

按照(7)的转移语义法,则译为egg-drop soup with shrimps,属于交际翻译。

虽然容易被外国人接受,但没有忠实地体现原语义,缺乏文化内涵。

如果金玉满堂出现在国外的饭店,可能会采用后一种翻译。

如果是上海的传统饭店,可能采取前一种翻译,以保留菜名美好吉祥的涵义,推广中国的传统饮食文化,体现上海菜肴的特色。

四、结语
上海的菜肴风味各异,取名也多种多样。

本文结合纽马克的语义翻译和交际翻译理论,提出了具体的几种翻译方法,以供翻译工作者和餐饮业人士等相关人员作为参考。

这些翻译方法或以原文的词汇和句法结构为中心,翻译出菜肴的组成元素;或深层研究菜名背后的文化意义,尽最大可能保留其富含文化特色的原文,传播上海的海派风情和历史文化;或转移语义,便于食客了解菜肴的组成元素;或借助已有的类似菜名,让国外友人更易接受理解。

在翻译过程中,翻译人员应该孜孜不倦地对上海和西方的历史文化进行研究,虚心向有关专家和人员请教,适时适地选取恰当的翻译方法,以获得最好的翻译效果。
