原始时期的人类对饮食还不是很清楚，茹毛饮血是常有的事。
那个时期豺狼猛兽要远远多于人类，所以为保安全，我们的祖先都息聚在巢穴里，史称“巢氏之民”，他们在我们不知道的时间角落中，看着寒星、饮着鲜血、撕咬着生食、瑟瑟发抖。
到了上古时期燧人氏就学会钻木取火，自此人类就在熟食的牵引下告别了茹毛饮血欢喜的走入石烹时代；自此人类就从野蛮走向文明。
新石器时代中国的食物原料来源相对比较稳定，再加上陶器的产生与使用，中国渐渐有了饮食的萌芽。
在基本的炊餐器具齐备条件下，伏羲氏和神农氏又在饮食的道路上开辟了新的殿堂——布下渔网养鱼，构建木篱圈养牲畜，耕种农田遍尝百草，等到时机成熟用它们充当饮食材料。
灶神黄帝的出现让中华民族的饮食状况又有了新的改善，灶神教于我们集中火力节省燃料使食物速熟。
朝代的建立更替，农业的发达，对周秦汉唐饮食时期来说具有蓬勃性的发展。
相对比的饮食成熟定型期的元明清帝国，自然而然就是饮食文化的另一高峰。
这个时期的饮食是唐宋饮食的继续和发展，同时又混入满蒙的特点，所以饮食文化有了很大变化。
饮食文化是中国值得骄傲自豪的，是值得令人拍案叫绝，心旷神怡的。
（二）、西方饮食文化汪洋大海、翠色欲流、古树岑天是西方国家给我们的一贯印象，在这些美轮美奂的自然境况中，我们可以简单明了知道西方民族的血液里秉承着游牧民族、航海民族的血统，喜爱以渔猎、养殖为生。
西方饮食文化以欧美最具有特色，以下就法国、英国、美国等西方国家介绍西方的饮食文化：古罗马又称外高卢，公元476年西罗马帝国灭亡，法国就是这废墟上逐渐建立起来的国家。
因为当时的国家情况，有很多雅典和罗马的有名厨师在此切磋，慢慢的就奠定了法国菜的基础。
英国人没有法国崇尚美食，加上英国的农业发达，粮食每年主要靠进口，因此英式菜相对来说比较简单，英国人也常自嘲自己不善烹调。
但英式菜的早餐却很丰盛，受到西方各国的普遍欢迎。
美国，美国的居民大都是从英国移民过来的，所以美式菜基本上是在英式菜的基础上发展起来的。
而且美国的历史短，思想比较开放不喜欢墨守成规，生活习惯也别创新格。
丰富的农牧产品，及其他移民和当地印第安人的生活习惯结合，日积月累就形成了独特的美国饮食文化。
二、中国饮食特点中国是文明古国，悠久的饮食文化若皑皑白雪中的那点绯红，无数才子佳人研墨提笔在宣纸上走下一句句曼妙的诗词，饮食意境之美可想而知。
现将中国的饮食归为以下几个特点：（一）、注重美感暂不论中国烹饪技术的精湛，单说菜肴美感的注重，中国的食物历来在色、香、形、味、美上有着高度的一致协调。
美感多方面多层次是中国对饮食的追求，无论是胡萝卜，还是嫰水瓜，都可以雕出千变万化的造型，真真是“此音只应天上有，人间哪得几回闻”!（二）、风味万变丛山峻岭，海溪清澈，葱郁连绵，中国的幅员向来辽阔，地大物博，各地气候、物产、风俗习惯难免都存在着差异，如此一来，饮食也难免风味百千。
所以“南米北面”“南甜北咸东酸西辣”的俗语就称得上是真理了。
（三）、四季不一春夏秋冬，一年四季，不同的时令吃不同菜肴是中国的另一大特点。

在生活中多半人群爱吃辛辣异酸的食物，认为这是食的美、食的魅，事实却不非如此，长时间进食此类食品会导致人的机体呈现亚状态健康。

我国地域辽阔饮食自然百变，光是因地域而命名的菜系就有八大菜系。
地域的先天条件不同，取材也就各有所好，食物也就各有千秋。
三、西方国家的饮食特点长辈们常说做饭就要讲究个“一咸三分味，一辣十成”，做饭就要做出饭含百味菜有回香。
而西方国家却无甜不餐，无餐不甜，生中含血，冷字首选。
地域历史的不同，国家的饮食习惯也就天壤之别，西方国家的饮食在营养搭配，器皿选用，烹调选料调味上和中国饮食习惯大有出处。

（四）、餐饮选料选料精细，用料广泛是西方饮食的重头戏，一般不会在食谱出现的酸奶油、桂叶和柠檬等都在西方菜肴担当主演，橄榄油、芝麻油更是煮夫煮妇们的大众情人。
