crispness and tenderness. Typical menu items include the Bird’s Nest Soup (燕窝汤)
and Yellow River Carp in Sweet and Sour Sauce.
c.Sichuan or Szechuan cuisine (川菜), noted for its spicy and pungent flavor, is one of
the most famous cuisines in China. It emphasizes the use of chili in most dishes. The
Hot Pot, Kung Pao Chicken, Twice Cooked Pork (回锅肉), and Mapo Tofu are some
of the typical items on a menu of the Sichuan cuisine.
d.Guangdong or Cantonese cuisine (粤菜) is a Chinese cooking style most familiar to
the Westerners due to the large number of Cantonese restaurants in the Western
countries. Spice is not used too much in Cantonese cooking but the aim is bringing
out the natural flavors of vegetables and meats. Typical Cantonese dishes include the
Shark Fin Soup (鱼翅汤), Steamed Sea Bass, and Roasted Piglet.
