基本做蛋糕術語+烘焙原料中英文對照表打發因攪拌使空氣進入而使整個物體膨脹起來或產生變化,打發奶油時雖然膨脹性較不明顯,但可看到奶油顏色改變;打發蛋白時,則液體狀的蛋白會膨脹為固體狀的泡沫。
濕性發泡為蛋白打發時的程度,蛋白打發後以攪拌器拉起,如果尖端挺立而尾端略為彎曲,就是濕性發泡。
一般而言,蛋白打發時,要打到濕性發泡才行。
乾性發泡為蛋白打發時的程度,蛋白打發後以攪拌器拉起,如果尖端挺立但尾端不能彎曲,就是乾性發泡。
只有在製造某些難度較高的西點產品時,才須打發到乾性發泡。
分蛋即為把蛋白及蛋黃分開來處理的作法,例如做戚風蛋糕就是運用分蛋的作法。
糖化砂糖放入水中溶解時,達到一個糖量後就不會再溶解。
而將糖液加熱溶解時,則可分為「不飽和」、「飽和」和「過飽和」三種狀態,當達到一定濃度以上的「過飽和」糖液,會使砂糖再結晶為白色固體,此稱為糖化現象。
翻糖以糖化現象為原理而製作出來的,充份攪拌糖液,使其再次結晶為白色的糖塊,叫做翻糖。
這是在19世紀初開始被利用於西點裝飾上的,將此糖塊再加熱至35℃左右就會成為流動的白色糖液,裹在蛋糕或點心表面,如同覆蓋上一層白色的糖霜般,且可調成各種口味。
粉類過篩麵粉或麵粉和其他粉類一起混合時都須要使用篩網過篩,以免攪拌時麵粉會在麵糊中結粒,尤其低筋麵粉吸水性強容易受潮,使用前一定要過篩;而且當多種粉類混合時,過篩可讓粉類混合的更均勻。
如果時間許可,在製作過程中以在使用前(即粉類加入前)過篩最好。
鬆弛做撻皮、餅干時,加了大量麵粉攪拌而成的麵糊,為了保持碌開時麵糰的彈性,並使烘烤時較不易收縮、變形,所以須將麵糰放入冰箱稍為冷藏一下,或放在室溫中靜置數分鐘。
且為了防止表面乾燥,必須用塑膠袋或保鮮紙包好。
隔水烤為避免直接受熱而造成產品加熱過度,組織變得較粗糙,所以在烤盤中放少許的水,隔著一層水來烤。
例如烤布甸時要隔水烤,才會有滑嫩的口感,烤芝士蛋糕隔水烤才會有綿密的組織。
手粉在碌麵糰時為防止麵糰黏著桌面,所以使用少許的麵粉撒在工作木台面或麵糰上,來做防黏的動作,也可以讓動作更好操作,通常使用的是高筋麵粉。
