走进海南特色小吃高二(6)班黄晓儒海南由于地处独特的地理环境,四面环海,是我国少有的热带区域,可供烹饪的原料极为丰富,尤其是生猛海鲜、时鲜水果应有尽有。

正如明朝一代文豪丘浚所说,海南“所生之品非一,可食之物孔多,兼中外之所产,备南北之所有”。

海南最具特色的风味小吃,流传历史久远,在海南岛北部的海,市、琼山市、定安县和澄迈县的市镇居民中食用比较普遍,而且是节日喜庆必备的象在吉祥长寿的珍品。

如海南粉、抱罗粉、琼南伊府面、陵水酸粉、海南煎粽、东山煎饼、锦山煎堆、燕粑、鸡屎藤粑籽、万宁糯米卷、甘薯汤丸、椰子盅、黎族竹筒饭等,都在民间广为流传。

说起海南传统小吃的特色,可概括两点:一是,海南传统小吃离不开当地特产;二是,制作技艺是海南特色。

比如海南的粽子是用新鲜的粽子叶,而广东就是多用竹子叶。

海南粉有两种:一种是粗粉,一种是细粉。 一般来说,海南粉还包括灵山粗粉(即抱 罗粉),陵水酸粉,澄迈粉,加积牛腩粉等等。 粗粉的配料比较简单,只在粗粉中加进滚 热的酸菜牛肉汤,撒少许虾酱,嫩椒、葱 花、爆花生米等即成,叫做“粗粉汤”。 而细粉则比较讲究,要用多种配料、味料 和芡汁加以搅拌腌着吃,叫做“腌粉”。 海南粉通常指的就是这类“腌粉”。

金江酸菜
酸菜是南北方都有的。但金江酸菜又有 别于南北方的酸味。它的原料乃是一种 与茎食萝卜同科的大叶菜,当地人称为 “六帮菜”或“六卜菜”。又因制作时 只取其幼嫩的苗秧,故这种专门用来制 作大茂酸菜的菜秧便被村里人称为“菜 仔”。
