厨房美食菜谱:海蛎煎的做法
自从在厦门吃过海蛎煎后,老是想再吃,现在可以自己做,想什幺时候吃就什幺时候做了
食材
主料:
蚝肉
红薯粉
葱
油适量
盐适量
生抽少许
料酒少许
胡椒粉少许
五香粉少许
步骤
1.葱切葱花
2.称出所需红薯粉
3.加入清水,开成面糊
4.鸡蛋磕入碗
5.加入盐和几滴生抽,搅成蛋液
6.用流动水把蚝肉冲洗干净
7.烧开水
8.放入蚝肉,焯熟
9.倒出,再用清水冲洗
10.热油锅
11.放入蚝肉
12.加入少许料酒和盐
13.留一份用量的蚝肉
14.加入葱花炒匀
15.加入适量面糊,煎至面糊凝固
16.加入蛋液,煎至底面熟
17.翻面再煎至另一面熟
18.装盘就可以了
小贴士:生蚝肉最好先焯熟,再冲洗净细沙。

在市场上看到新鲜的袋装牡蛎肉,又大又新鲜,忍不住买了两袋回家吃。
这种牡蛎肉性价比很高,质量肉眼可见,比带壳的便宜很多。
买的时候,第一是看个头,第二是看牡蛎的完整性。
牡蛎肉坏了就不要买了。
用料:大生蚝肉2包约20个,蒜3-4瓣,姜4-5片,葱3根,红葱头3-4个,酱油1勺,蚝油1勺,白酒1勺,糖5克,盐适量
煎焗生蚝,肥美香嫩爆汁的做法:
在牡蛎肉中加入生粉和少许油,小心抓住,不要划伤。
静置15分钟后,用水冲洗干净。
洗好的牡蛎肉肥美诱人。
将牡蛎肉放在架子上,在通风处晾6小时以上。
如果有太阳,可以在太阳下晒干,这样更香。
如果不想干,可以先焯水,然后沥干,油炸。
在生粉中加入少许胡椒粉和黑胡椒粉,将牡蛎肉放在上面,两面沾一层薄薄的生粉。
锅里烧热油,放入蒜、葱、姜翻炒,然后放入牡蛎肉片,煎至两面金黄。
快好的时候用白酒、蚝油、酱油、糖煨一下,最后放洋葱。
小贴士:牡蛎干的不够,炒的时候还是会出水。
不用担心,取了生粉自然会有酱。

生蚝又叫牡蛎,它营养丰富,高蛋白低脂肪,含有人体必需的8 种氨基酸,还有糖元、牛磺酸、谷胱甘酸、维生素A、维生素B1、维生素B2、维生素D、维生素E、岩藻糖及铜、锌、锰、钡、磷、钙、镁、铝、氧化铁和有机质。
这些营养成分让生蚝有着美容养颜、宁心安神、益智健脑的功效。
生蚝中含有的牛黄酸,能够很好的降血脂、降血压。
并且它矿物质含量丰富,在平时多吃生蚝,可以提高人体的抵抗力以及免疫力,并且生蚝中含锌量很高,对男人很有好处。
材料:
生蚝 500克
配料:
洋葱 80克香葱 50克
蒜瓣 1/2个
调料:
酱油 15克砂糖 2克盐适量
做法:
1--2、把所有材料准备好。
3、香葱洗干净,切段。
4、洋葱去掉最外层,洗干净,切片。
5、蒜瓣去掉外皮,剁成米粒般大小。
6、热锅下油,油烧至六成热时,下剁好的蒜粒,中小火炒成金黄色,铲出备用。
7、生蚝洗干净,放进篮里稍微沥一下水。
8、倒入已烧开水的锅中,大火焯1—2分钟,取出沥干水分备用。
9、热锅下油,油烧至六成热时,放入生蚝,中火煎至两面金黄,取出备用。
10、把所有调料倒入碗中,加入小许清水,搅拌均匀,成为料汁备用。
11、砂锅洗干净,烧热,加入小许食用油。
12、放入切好的洋葱片、葱段。
13、中小火,用筷子翻炒至闻到香味时,加入煎好的生蚝,并浇入调好的料汁。
14、再用筷子轻轻翻动几下,使生蚝能均匀地裹上料汁。
15、最后,在出锅前倒入炒好的金蒜。
非常的惹味,尤其是上桌时,砂锅的余热和葱段香味混合在一起,发出“吱吱”声时,特别地诱惑。
春天的生蚝,最肥大,一口咬下去,鲜美无比,特鲜。
美味小贴士:
1、步骤8中,生蚝焯水时,只须1-2分钟,时间长的话,生蚝会太熟,影响口感。
2、生蚝多吃会有点腻滞,如果消化能力不太好的话,不要多吃。
3、喜欢吃辣的,还可以加点辣椒。
