一块牛排,肥美多汁,生产它需要排放大量二氧化碳。

但在看了个图就接受感召之前,我们总是要先问,这些真的有影响吗?少吃牛肉,能减少碳排放吗?食堂那张图里的数据出自2017年发表的一篇系统综述。

它网罗之前的研究,分析了生产168种新鲜农产品对气候变化的影响,并用生产每千克该农产品所需排放的温室气体的“二氧化碳排放当量”(Carbon Dioxide Equivalent)表示出来。

以中位数计,生产1千克鸡肉的二氧化碳当量为3.49千克。

相比之下,生产1千克大豆的二氧化碳当量是0.49千克,牛肉的却高达26.61千克。

(注:条形图里用的是算术平均数,所以数值上稍有差别)。

考虑到能量转化效率和牛自己的“排放”,生产牛肉比其他肉类要更“不环保”。
