一提起果蔬当中的农药和化肥,的确让主妇们很头痛。

专家说,这些蔬菜瓜果的农药残留物主要是农药当中的有机磷和化肥当中的氮肥,如果清洗不净,又长期食用这些残留有农药的瓜果蔬菜,可能会危害我们的健康。

生活中有哪些方法可以较好地清洗蔬菜瓜果呢?又有哪些蔬菜瓜果是“安全”的?身为家庭主妇的你该如何保卫家庭餐桌的安全呢?本报特意采访了中国农业大学食品质量安全系的戴蕴青副教授和中绿华夏有机食品认证中心审核员丛林晔。

巧清洗保卫餐桌安全-蔬菜除农药法一、冲洗法:方法:以不断流动的清水洗涤蔬菜,借助水的清洗及稀释能力,可把残留在蔬果表面上的部分农药去除。

适合蔬菜:1. 包叶菜类蔬菜:如高丽菜、大白菜等,可将外围的叶片丢弃,内部菜叶则逐片用流水冲洗。

2.小叶菜类:如青江菜、菠菜、小白菜等,但因蔬菜的叶柄基部,以及青椒、水果的向上凹陷处,都易残留农药,需部分切除或直立用流动水冲洗。

二、淡盐水浸泡:方法:一般蔬菜先用清水至少冲洗一下,然后泡入淡盐水(比例:100毫升水,5克盐)中浸泡10分钟左右,之后再反复用清水冲洗。

适合蔬菜:容易受农药污染的蔬菜,如豆角、芹菜、白菜、菠菜、黄瓜等。

三、碱洗:方法:在100毫升水中加入5克左右的食用碱来清洗,因为食用碱能够中和农药,搅匀后再放入蔬菜,浸泡5至10分钟,再用清水冲洗。

也可用小苏打代替,但碱水法容易造成蔬菜的营养素流失,尤其是维生素C。

适合蔬菜:茄果类蔬菜,如茄子、番茄、黄瓜、柿子椒、苦瓜。

四、开水烫法:方法:下锅前先用开水烫一下,捞出再清洗一两遍。

加热法可使氨基甲酸酯类杀虫剂随温度升高加快分解,清除大部分残留的农药。

适合蔬菜:花类蔬菜,加热法适合一些其他方法难以处理的花类蔬菜,如青椒、菜花、豆角、芹菜等。
