As we all know, Hunan cuisine[kwi'zi:n] is one of the eight great traditions of Chinese cuisine including粤、川、鲁、淮、浙、闽、湘、徽. And I think there are four characteristics of it. Firstly, it’s famous for its appetizing, soft, clear and crisp(香嫩清脆).Secondly, it is very spicy, having a strong and hot taste, which I really enjoy. Thirdly, it contains a lot of cooking methods including frying(煎), stir-frying(炒), braising(炖), stewing['stju:iŋ] (蒸), simmering(煨)and smoking(熏). Finally, special seasoning including lobster sauce [sɔ:s]豆豉、tea oil、chili oil、chili sauce、pepper、fennel 茴香、cinnamon ['sinəmən]桂皮 is used when cooking. Shaoyang, as a city in Hunan province, the food there has the feature of 湘cuisine, but also has something special and unique. Then, I will choose some typical food to introduce. If you want to eat something cheap and fine, steamed dishes are your best choice. No matter it’s vegetable or meat, each bowl[bəul] is only 1 to 3 yuan. There’re many such restaurants in the street, but each has its special taste. So if possible, you’d better to try all of them. Next, I will introduce pig blood balls, which is a traditional food in Shaoyang. It has a history of several hundred years from Qing Dynasty .Nearly every family in Shaoyang knows how to make it and enjoys it .Its main ingredient[in'ɡri:diənt] is tofu .Firstly ,drain it with gauze [ɡɔ:z] .Then ,crumb it ,add meat ,pig blood, seasoning and stir to mix well .After making balls ,put them in the sun for some days .Finally ,smoke them above a stove and it’s very important to control the fire to make it taste good .It’s up to you to how to eat it ,to steam or to stir-frying. At the beginning of this term, Su brought some balls her father made to us, and I think it has a very strange smell and tastes a little like ham. It’s important to choose the meat from legs of pork .After curing['kjuəriŋ] it for about a week ,smoke it over a sawdust fire for another seven days. After finished, it is very chewy. ['tʃu:i] Although egg dumplings are common, the Shaoyang’s are different from others in their special shape. People make a big one first, and then cut at an angle into small segment, just like this. Shaoyang’s rice noodles are very famous .They are more spicy than Changde’s .Maybe the stands selling them on the curbside are not clean ,but it doesn’t influence the delicious taste. There are many restaurants selling native chicken. Among all of these, 桃花洞’s are best. Wugang is famous for its Tong’e and Lu tofu .Tong’e is a type of goose .Wugang’s gooses have ever been called three treasures in Hunan with pigs in 湘莲&宁乡.Lu tofu has been soaked in water mixed with Chinese herb ,which made it smell special and have good effect on health .Moreover ,the formula of how to make it is only passed to boys not girls. I think it has name because it looks quite like lily. It’s also called 萱草&忘忧草。 Shaodong is called the hometown of day lily .The day lily there is listed as one of top eight high-value vegetables for its rich nutrition. [nju:'triʃən] Because of suitable climate ,the crops there grow very well .Whenever festivals or weddings ,people in Shaoyang made Glutinous['ɡlu:tinəs] Rice Cake to celebrate . People also like to make sweet rice wine. The wine is always eaten with eggs or glue puddings.
