1 引言
翻译,不能简单地理解为就是将一种语言转化成另一种语言。
高质量的翻译首先要着眼于对语言的理解的基础之上。
这种理解,不仅仅指对语言本身的理解,还包括孕育该语言的文化,历史背景和现实意义等。
2 有中国特色的饮食文化
“饮食是人类最原始,最古老,最基本的行为,是人类的第一需要,语言和食物有着密切关系,并且相互影响。
”(殷莉、韩晓玲,2007:126)对菜名的翻译,应该包含有丰富的饮食风俗和文化信息。
中国的饮食文化博大精深,大的方面来说,除了有著名的八大菜系之外,小的方面看来,各地也有自己独具特色的饮食。
此处,以四川省自贡市的一道民间传统特色菜冷吃兔为例,探讨有中国特色的术语的翻
译原则和方法。
兔子,既是人们的宠物,也是一种食物。
在四川省境内,兔子一直以来都是自贡当地的,受到当地人们喜爱的一种美食。
兔子,根据烹饪方法的不同,可以分为冷吃兔,鲜锅兔,水煮兔,干锅兔,葱香兔,蘸水兔等。
再搭配些其他原材料,比如蔬菜等,可以制成多种菜肴。
追溯冷吃兔的历史,据说已有百年。
在自贡当地兔肉供应十分充足,基本上可以和猪肉,牛肉同步,成为当地人餐桌上的主食。
本地人也十分喜爱吃兔肉,尤其是喜爱一种名为“冷吃兔”的菜品,几乎每家都会做,具体的做法大同小异,绝大多数人都爱吃。
不仅如此,一般有朋友自远方来,地主们招待客人的必备菜肴之一就是冷吃兔,外地人品尝之后,往往是称赞不已;若是当地人外出学习,工作或者生活,也喜欢做上一些冷吃兔,抽成真空,随身携带解馋。
食兔肉是现代人的最优选择,长期食用具有健脑益智,延年益寿、减肥和美容的特殊功效。
前面讲到,自贡地区几乎家家都会做冷吃兔,用新鲜的兔肉(可依据个人口味去骨或者不去骨)、干辣椒(口味偏辣者,可多放)。
大蒜、生姜、八角、大料、花椒、酱油、糖、醋,食用油等原材料炒制而成。
色泽鲜亮,具有麻、辣、香、酥、微甜的独特风味。
放在口中咀嚼,香酥无比,回味无穷,一直深受食客们的喜爱。
3 菜名的翻译原则和方法
“把鲜活的民族词汇洋化,把一些具有丰富民族文化内涵的特色
词汇生搬硬套地使用现有的英文词汇,出来的东西只能是‘貌合神离’,使得译语的读者或听众一头雾水。
”(陈亚杰、王新,79)。
菜名的翻译应该体现其民族内涵和文化意义,必须遵循与菜品的主料,作料,烹饪方法等内容紧密相连的原则。
以前面提到的冷吃兔为例。
对“冷吃兔”的英译在互联网上查到的有如下几种:1Cold Rabbit.(金山词霸);2,Cold Eat Rabbits(/translate);3,Cold to eat rabbit (/translate_t?hl=&ie=UTF-8&text =%E5%86%B7%E5%90%83 %E5%85%94&sl=en&tl=zh-CN #zh-CN|en|%E5%86%B7%E5%90%83%E5%85%94);。
除此以外,英文词典Longman Dictionary of Contemporary English中,对“兔”的解释:(1 a common small animal with long ears and soft fur, that lives in a hole in the ground;2 the fur or meat of a rabbit。
)这表明,”rabbit”既可以用来指一种动物,也可以指“兔肉”,“冷吃兔”中的“兔”应该指兔肉,所以,此处可以直接英译为”rabbit”,也可以翻译成”rabbit meat”,外国人也是可以理解的。
从上文可知,“冷吃”指的这是一道凉菜,炒制出来的兔肉要等到凉了再吃。
川菜中的凉菜不在少数,比如糖醋排骨(sweet and sour spar eribs);“兔”指的是这道菜所用的主料是兔肉,可以英译为“to eat the cold and spicy rabbit”,直译出来就是“吃冷的辣的兔肉”。
四川风味的菜品其与众不同的特色就是麻辣,比如麻辣豆腐(bean curd with pepper and chili),麻辣鸡丝(chicken shreds with pepper and chili)。
冷吃兔的主要口味就是它的麻辣味。
4 结语
综上所述,通常采用意译的方法来翻译菜名。
通过适当地改变原文的形式,来重新表现原文的内容,突出中国特色的菜品。
如前文说述,“冷吃”,一是指品尝这道菜的一个时间,二是指这是一道凉菜。
凉菜一般是在正餐之前,用作开胃,下酒之用。
作为正式的菜名,直接翻译会让人一头雾水,所以很少使用。
对于冷吃兔的翻译,应该有多种英译法。
如果能够得到大家的认可,那就可以推广使用。
如“cold rabbit meat with pepper”(强调作料和口味);spicy and cold rabbit meat(强调麻辣的口味);stir-fried rabbit meat in hot oil(强调烹饪的方法和作料,冷吃兔必须要用食用油来炒制)。
菜名的翻译,一定从主料,作料,烹饪方法,味道的角度出发来翻译。
上述关于冷吃兔的翻译,基本上符合遵循了这些翻译的原则和方法。
既保留了原菜的内容和意义,也能够让食客一目了然,对菜品有更多的理解。
