But the food is simple potato noodles and bits of meat in it, while most of western food has a simple and clear name and you know what it is when you hear the name. For instance, there is a traditional food call "fish and chips" in the UK. You see it is very obvious it is fried fish and potato chips. The reason for this in China is on the one hand to try to tell you the way it cooks such as cook, fry, grill and broil in the name and on the other it has beautiful good names so that you have a good imagination and association to let you have a good appetite.•Too Much Food to Eat at meals•We Chinese think it very disgraceful (可耻)if we don't cook the food enough for the guests so we normally cook more food than guests eat. If you finish your food at meal, the host and hostess usually add more and more food in your dish or bowl without asking you whether you want it or not so as to show they are polite to the guests. They will keep saying, "eat more" and in English we have the expression "help yourself". Americans never force you to eat more. If you stop eating, they tend to think you arefull. So sometime foreigners feel very helpless when the host and hostess to put more food in their dishes and bowls and they can do nothing but eat more and more until they are completely full. So some foreigners learn to know they always leave some food in their bowls or dishes in order to avoid more food to be added when are invited to dinner in Chinese family. That is the differences in food culture between China and the West.•Tableware Is Simple in Chinese Meals•Generally speaking, we don‘t use much tableware (餐具)when we have our meal in China. The United States, as the world’s leading power, has more and more frequent exchanges with China in various fields, including many cultural exchanges. In different styles of Chinese and American culture, food culture is a very important content.In order to gain a deeper understanding of the cultural characteristics of China and the United States, this article will introduce the differences in food culture between the two countries from four parts. The first part mainly introduces the respective connotations and characteristics of food culture in China and the United States. The second part expresses the differences in the specific dietary culture between the two countries from five aspects: the daily food types, the use of dishes, the order of servings, the arrangement of seats, and the concept of eating and drinking. The third part briefly analyzes the main reasons for the cultural differences between China and the United States from geographical factors and traditional customs. ——以中美饮食文化为例
摘要:饮食是一种文化,而不同的文化背景孕育着不同的饮食文化,中国饮食以食表意,其博大精深不可言喻,而美国的饮食则是吃什么就是什么。

在中西方文化互相交融的今天,美国文化有值得我们学习和借鉴的地方,同时中华饮食文化的优点也要继承,本文着重从中美饮食文化进行比较,从而用客观的视角去审视中西方饮食文化。

1中国饮食文化的特点
中国的历史悠久,文明源远流长,具有上下五千年的文化,因此饮食文化也比较丰富,它也是祖国丰富文化宝库中的一朵奇葩。

中国从原始社会开始都是以大杂居为主,远古时期以部落为单位,后来一直演变,直到现代社会都是以家庭为单位,团团圆圆一直是中国人的愿望,中国人的集体意识形成了中国饮食文化的一大特点就是—一家人都是吃一桌菜,并且大多数家庭是以圆桌为主,一家人围在一起,表示家人和和睦睦、团团圆圆。

中国人的饮食很讲究色、香、味原则,三者缺一不可,为使食物色美,通常是在青、绿、红、黄、白、黑、酱等色中取三至五色调配,也就是选用适当的荤素菜料,包括一种主料和二、三种不同颜色的配料,使用适当的烹法与调味,就能使得菜色美观。

食物香喷,可以激发食欲,其方法即为加入适当的香料,如葱、姜、蒜、辣、酒、八角、桂皮、胡椒、麻油、香菇等,使烹煮的食物气味芬芳。

烹调各种食物时,必须注重鲜味与原味的保留,尽量去除腥膻味;譬如烹调海鲜时,中国人则爱用葱姜。

因此适量的使用如酱油、糖、醋、香料等各种调味品,可以使得嗜浓味者不觉其淡,嗜淡味者不嫌其浓,个人根据自己的口味选择。

因为中国自古以来地大物博、人口稠密,所以中国人的饮食从先秦开始,就是以谷物为主,肉少粮多,辅以菜蔬,这就是典型的饭菜结构。

其中饭是主食,而菜则是为了下饭,即助饭下咽。

因为主食并不可口,必须有一种物质来辅助它使人们能够吃下去。

当然菜的功能和盐的功能有共同点,但是不等同于盐。

因为主食的单一性,所以,只有在菜上面花功夫,因此,中国的菜大都比较注重口味,
同时,在菜的外表上也添上了很多花样,使人看着更加的有食欲。

中华饮食文化内涵丰富,几乎每道菜都有它的历史典故。

例如:开国第一宴,也是我们淮安人所引以为傲的淮扬菜。

淮扬菜是在扬州菜和淮安菜的基础上发展起来的。

它的兴起和隋朝大运河的修建有很大的关系,隋炀帝曾经三下江都,客观上促进了淮扬菜的发展。

虽然扬州菜和淮安菜发展在不同区域,但是两地文化习俗相近,再加上大运河的修建推动了两地漕运、河务和盐运的互动和发展,两方的厨业界也有了互相交流、相互借鉴的机会;当时的淮安菜品种多,但是味道稍显粗糙;扬州菜品种不多,但是制作精细。

两地的菜肴相容相长、互相影响、趋同发展,从而使淮扬菜逐渐形成相对统一、相得益彰的完整体系。

2 美国饮食文化的特点
美国是一个文化历史比较短的国家,在南北战争期间,美国融合了西方各个国家的人种,他们的文化呈现出比较杂的局面。

其中有两大主要因素,一个是乡土性的地缘因素,一个是多元性的人为因素,对美国而言,多元性的人为因素比乡土性的地缘因素更具有关键性的影响。

在欧洲意大利,由于地形、土壤、气候等原因有南方菜与北方菜的分别,但之间的差异性不大,主要原因是这个国家的老百姓都是同文同种,人为因素的差异不大。

法国、西班牙、英国、德国这些国家境内都有一些不同的地域性菜肴,但彼此之间差异性也不大。

由于受到早期移民的影响,传统的美国菜就如同传统的美国佬,它的特色是“粗狂实在”,食用新鲜的原材料,不靠添加剂,调味剂,食物保持原汁原味,烹调的过程不拖泥带水,无论是烤、煎、炸都没有很复杂的做工,也不讲究细火慢炖(除了少部分的地方菜肴),没有太多的花俏装饰,放在盘子里的食物都能吃下肚里,痛痛快快、实实在在地吃个饱。

美国食物的主要结构是一二三四制,如同三角形状,最主要的一是牛肉,二是鸡、鱼,三是猪、羊、虾,四是面包、马铃薯、玉米、蔬菜。

美国饮食最主要的就是讲究是否能够吃饱,现代社会,他们也更加注重食物的营养,现在美国人很喜欢吃肯德基、汉堡包这些快餐,这是一种在世界上特别典型的快餐文化。

3中美饮食文化的类型比较
中华饮食从种类和菜系上来说特别多。

仅从菜肴上看,汉族地区就有川、扬、
鲁、粤、浙、闽、徽、湘、京、沪等十几大菜系,均带有浓郁的传统色彩和地方韵味,每个菜系都有自己的代表菜肴,这些菜肴不下数百种,总计不下数千种。

我国少数民族食分奇异,特别是满、回、壮、傣、藏等民族都各有自己独特的风味菜肴,品种繁多,别具情调。

除菜肴外,还有饺、面、馍、粽、果、粥等特色食品,品种也有上千种之多。

美国的历史基本都源于欧洲,因此美国人全都承认欧洲菜是美国菜的祖先,美国菜是用欧洲菜作为“根”,再经过自己的培育、发芽长出枝叶,逐渐茁壮茂盛,树立了自己的主体,甚至还播种接枝,传播到世界各地。

美国西部有丰富的太平洋海鲜及各种河鲜,全美品质最新鲜、品种最繁多的蔬菜类水果,有著名的加州菜,及具有亚洲菜特色的融合菜。

南部有墨西哥特色的德州菜,具有法国、西班牙、非洲特色的路易斯安那菜,具有古巴、巴西热带岛屿特色的佛州菜,中西部有德国、荷兰、及北欧特色的芝加哥菜、宾州菜,东部有英国、法国、爱尔兰特色的新英格兰菜系及纽约菜,还有大洋洲东部岛屿、菲律宾、葡萄牙及日本特色的夏威夷菜。

4 中美饮食文化的习惯比较
一、中国人大多比较喜欢吃咸。

据统计,全国人均每天吃盐量为10克以上,其中以东北人最高,达18克。

而世界卫生组织建议每天食盐控制在每日5克以下。

吃过咸的会明显增加高血压、胃癌等发病例。

美国人多以甜食为主,甜食摄入过量也会增加糖尿病等疾病的发病率。

二、中国人吃味精过多,增加了人体对钠的摄入量,而钠对人体有害。

而美国人几乎是不吃味精的。

三、中国人喜欢吃动物的内脏,动物内脏有较多的胆固醇,胆固醇会诱发动脉硬化等。

动物内脏容易积蓄毒素,屠宰的动物不及时处理的话,往往总是内脏先变质腐烂,美国人一般不吃这些的。

四、中国人的吃饭方式多为集体进餐,又喜欢相互夹菜,这增加了疾病的发生,而美国大多是分开餐。

五、中国人每天进食的新鲜蔬菜要比美国人多得多,而美国人虽每天摄入大量蛋白质,但肠胃功能却因进食纤维素太少而受到影响,因此消化系统的患病率及患癌率均大大超过中国。

六、中国人喜食粗粮,而美国人偏爱精白粉等细粮。

实际上,粗粮所含营养物质要比细粮多。

七、中国城乡居民都喜食豆浆、豆腐、豆芽等豆制品,而美国人对此却往往“敬而远之”。

八、中国人饭后、迎客都沏一杯热茶。

喝茶能降低血中胆固醇含量;相反,美国人喜
喝的咖啡,却有可能提高血脂并刺激心脏。

九、餐毕,中国人爱吃点瓜果,而美国人往往再加一份甜食。

瓜果自然要比甜食更利健康。

十、中国人大部分家庭习惯于每天买新鲜食品,而美国人喜从超级市场一次性大量购回,然后每天食用冷冻食品。

美国人食用的罐头食品(含种种不利健康的化学添加剂)及腌腊食品(含有多种可能致癌的物质)分别为中国人的15倍和6倍。

十一、中国人爱吃植物油,而美国人做菜喜用含胆固醇较高的动物油,此外,每人还摄入大量黄油。

怪不得美国人心血管发病率特别高。

十二、中国人用筷时需动用数十条肌肉和10余个关节,因而称之为“健身活动”并不夸张。

美国人习惯用打叉,且活动量不大。

十三、中国人用餐时爱加醋、姜、蒜、葱、辣椒等佐料,能起杀菌、消脂、增进食欲、帮助消化等作用。

而美国人喜欢加柠檬汁等。

纵贯上述所说,中美在饮食习惯方面都有各自的优缺点。

6 结语
文化的差异造就了不同的饮食文化,我们中华饮食文化体系庞大,是世界饮食文化的重要组成部分,其内容之广博宏富及形式之绚丽多彩,堪称世界之最,对于外来的饮食文化,我们要以正确的态度去面对,好的方面我们要借鉴和学习,而不能全盘接受。

同时,我们中国人要能够对自己的传统饮食文化“去其糟粕,取其精华”,并将优秀的部分发扬光大。
