要使电力网成为又一个新的通信网技术手段只有载波通信。

电力线载波通信又分为35KV以上的高压载波通信;10KV配电网的载波通信和民用(400V以下)电力线载波通信。

在技术上高压载波通信主要为业内业务通信。

由于网络专一性,其简单的数据通信国内外已基本成熟。

进入千家万户的民用低压电力网才是最大的通信物理网络。

但在该网络上实现通信一直是全世界科技工作者的研究课题。

由于在低压电力线上实现通信有许多技术难点:如网络不规范、节点多、隔离多、随机干扰等。

也可以说民用电力线路阻抗对通信而言是一个不确定、无规则、随机干扰,网络特性呈拓扑特性的非标准通信网。

在技术上带来很大难度,成为通信领域上的一大挑战课题。

近10年来,美国、英国、德国、以色列、中国等国的科技人员一直从事这方面的技术研究与开发。

到目前为止,国内外已有一些企业开发出了用于电力线载波通信的产品:如开发的电力线载波抄表系统在技术上取得了可喜的进步和成功,但尚未能符合用户使用要求,由于专用芯片的原因,抄表系统的抄到率最高仅能达到90%左右。

尽管如此,目前我国在该方面的技术属先进行列。

实践证明用进口通用通信芯片不可能实现我国民用电力网的可靠载波通信。

但是随着市场需求和技术的发展,将来的民用电力线载波通信必将成为一个很大的通信网,是众商家瞄准的市场。

在电力线上实现数据通信,人们进行了很多尝试。

电力线作为一种通信传输介质,具有可变信号衰减、阻抗调制、脉冲噪声以及等幅振荡波干扰等不利于数据传输的特性。

鲜、冻分割牛肉GB/T 17238—1998
制定本标准参考了日本牛分割肉枝引规格、前苏联分割牛肉标准、美国牛肉分割法及其部位肉名称和对港牛分割肉标准。

分割牛肉的产品名称有许多外来语及习惯用语,这次为实现术语标准化,都以学名命名。

本标准由中华人民共和国国内贸易部提出。

本标准由国内贸易部消费品流通司归口。

本标准起草单位:全国肉类工业科技情报站。

本标准主要起草人:庄志尧、赵吉林、魏春耕、王津生、李气清、王贵际、陈斐莹。

本标准委托国内贸易部消费品流通司负责解释。

1范围
本标准规定了分割牛肉的定义、产品分类、技术要求、分割和冷加工要求、试验方法、检验规则、标志、包装、运输和贮存。

本标准适用于鲜四分体带骨牛肉,按部位分割、加工的产品。

3定义
本标准采用下列定义。

3.1分割牛肉cut beef
鲜四分体带骨牛肉,经剔骨、按部位分割而成的肉块。

3.2后小腿肉(牛展)belind shank hind shank
从牛后膝关节至跟腱处割下的净肉,包括腓肠肌、趾伸肌和趾伸屈肌。

3.3股内肉(针扒)boneless beef topside
沿缝匠肌前缘连接间膜处割下的净肉,包括股弯肌(股薄肌)、缝匠肌和半膜肌。

3.4臀部肉(烩牛扒)gluteus rump roast
沿半腱肌上端至髋骨结节处,与脊椎平直割下的下部净肉,包括半腱肌和股二头肌。

3.5膝圆肉(和尚头)boneless beef knuckle
沿股四头肌与半腱肌连接间膜处割下的股四头净肉。

3.6短腰肉(尾龙扒)short loin
沿半腱肌上端至髋骨结节处,与脊椎平直割下的上部净肉,包括臀中肌、半腱肌和股二头肌。

3.7小腹肉(三角肉、三角肌、股阔肌、膜胀肌)trianglemuscle
割下膝圆肉露出的三角形净肉。

3.8里脊肉(牛柳)fillet tenderloin
从腰内侧割下的带里脊头的完整净肉。

3.9腰部肉(西冷)loin striploin
从第5~6腰椎处切断,沿腰背侧肌下端割下的净肉。

3.10腹部肉(牛腩)belly steak
从前13肋骨断体处,沿股四头肌肉前缘割下的全部腹部净肉。

3.11背部肉meat of the baok fo the body sirloin roast
沿脊背骨两侧割下的净肉,包括颈背棘肌、半棘肌和背最长肌。

3.12肋条肉beef rib meat brisket
从肋提肌和肋间内外割下的净肉。

3.13胸部肉(牛胸)chest meat chuck
从胸骨、软骨、剑骨和胸部内套条割下的净肉。

3.14肩部肉shoulder meat huckc
从肩胛骨两侧割下的净肉,包括岗上肌和岗下肌。

3.15颈部肉boneless beef crop
从颈骨两侧割下的净肉。

3.16前小腿肉(牛展)fore shank
取自牛前腿肘关节至腕关节处割下的净肉,包括腕桡侧伸肌。

3.17皮下脂肪subcutaneous fat
去皮后留在瘦肉上的油脂。

4产品分类
按加工工艺分为:鲜分割牛肉、冻分割牛肉。

5技术要求
5.1原料
加工分割牛肉的原料应符合按GB/T9960—88中4.5和4.6的要求。

5.2感官
各部位鲜分割牛肉和冻分割牛肉的感官分级应符合表1的要求。

5.3挥发性盐基氮
各部位鲜分割牛肉和冻分割牛肉挥发性盐基氮应符合GB2708的规定。

6分割、冷加工要求
6.1分割
6.1.1按图1所示分割鲜四分体带骨牛肉
6.1.2冷分割:用四分体牛肉冷却后进行剔骨分割。

6.1.3热分割:屠宰活牛与热分割连续进行,从活牛放血到分割完毕进入冷却间,应控制在1.5~2h,分割间温度不得超高20℃。

6.1.4整修:整修应平直持刀,保持肉膜、肉块完整。

肉块上不得带伤斑、血点、血污、碎骨、软骨、病变淋巴结、脓泡、浮毛或其他杂质。

6.2冷加工
6.2.1冷却:应在24h内将肉块中心温度冷却至—2~7℃。

6.2.2冻结:肉块冷却后,应在72h内再使中心温度降至—15℃以下。

7试验方法
7.1感官
7.1.1色泽、组织状态、粘性
目测、手触鉴别。

7.1.2气味
嗅觉鉴别。

7.1.3煮沸后肉汤
按GB/T5009.44—1996中3.2规定的方法检验。

7.2挥发性盐基氮
按GB/T5009.44—1996中4.1规定的方法测定。

8检验规则
8.1出厂检验
产品出厂前由工厂技术检验部门按本标准逐批检验,并出具质量合格证书。

8.2检验项目
感官、挥发性盐基氮。

8.3组批
同一班次、同一种类的产品为一批。

8.4抽样
8.4.1从成品库码放产品的不同部位,按表2规定的数量抽样。

8.4.2从全部抽样数量中抽取2kg试样,用于检验煮沸肉汤和挥发性盐基氮。

其余部分用于感官检验和评定等级。

8.5判断规则
按5.2和表2判定产品。

8.6复验规则
经检验某项指标不符合本标准规定时,可加倍抽样复验。

复验后有一项指标不符合本标准,则判定为不合格产品。

9标志、包装、运输和贮存
9.1标志
9.1.1内包装标志应符合GB7718的规定。

外包装标志应符合GB/T6388的规定。

9.1.2按伊斯兰教风俗屠宰、加工的分割牛肉,应在包装箱上注明。

9.2包装
9.2.1内包装材料应符合(GB/T4456、GB9681、GB9687、GB9688和GB9689规定。

9.2.2外包装材料应符合GB/T6543的规定;包装箱应完整、牢固,底部应封牢,箱外用塑料带捆扎牢固。

9.2.3可以采用大包装或小包装。

9.2.3.1大包装:将整箱肉块整齐放入塑料薄膜袋,装入包装箱。

9.2.3.2小包装:每一肉块分别用小塑料薄膜袋包装,放入大塑料薄膜袋,装入包装箱。

9.2.4包装箱内肉块应排列整齐,每箱内肉块大小应均匀。

定量包装箱内允许有一小块补加肉。

9.3运输
应使用符合卫生要求的冷藏车或保温车(船)。

市内运输可使用封闭、防尘车辆。

9.4贮存
9.4.1冷却分割牛肉应贮存在0℃~4℃、相对湿度85%~90%的冷却间。

9.4.2冻分割牛肉应贮存在低于-18℃的冷藏库。

冷藏库每24h升、降温幅度不得超过1℃,相对湿度大于90%。

符合上述条件时,产品保质期不短于12个月。
