浅谈中式菜肴名称的英译作者:未知资源来源:英语教师网点击数:85 更新时间:6/6/2008一、引言中国历来就是一个十分讲究吃的国家,中国菜已经历了四五千年的发展历史,其高超的烹饪技艺和丰富的文化内涵,堪称世界一流。

“People regard food as their prime want, and food safety should be given the top priority民以食为天,食以安为先。

” [1](P299)可见自古以来人们把“食”看作是头等重要的事,饮食文化是中国传统文化的重要组成部分。

随着中国加入世贸组织,北京成功申办2008年奥运会,以及旅游事业的蓬勃发展,中国在与世界接轨,吸纳外资和先进技术的同时也会迎来大批的海外观光客。

他们在饱览中国秀丽风光的同时一定也极想品尝一下中国的美味菜肴。

中国菜流派纷呈,原料丰富。

中菜的菜名,既有实用性又有艺术性,反映了中国饮食文化的历史,也折射出国人的风俗习惯、思维方式及价值观念,有浓郁的地域性文化特色。

因此准确形象的把中国菜名译成英语,对传播我国饮食文化起着重要的作用。

但是因为东西方语言和文化的差异,要把中国菜名翻译得准确生动,并不是一件容易的事,也是发展涉外旅游必须要面对的一个问题。

二、刀工与烹调方法的译法因为菜名的翻译经常会涉及到这道菜的烹法,原料,用料形状等各方面,所以要想把中式菜肴名称翻译得贴切,笔者认为译者须对中国菜的刀工及烹饪方法的译法做一番了解。

(一)、刀工的译法用刀的方法和技巧主要有:切、削(cutting),切片(slicing),切丝(shredding),切碎(mincing),切丁(dicing),切柳(filleting),去骨(boning),去皮(skinning/peeling),刮鳞(scaling),剁末(mashing),刻、雕(carbing)等。

经过加工后的原料具有丁、条、丝、片、块等几何形状,如肉丝(pork shreds),鸡块(chicken slices)等。

其他的加工方法还有酿(stuffing),腌(picking/salting),浸\泡(marinating),去壳(shelling),刨丝(grating)等。

(二)、烹调方法的译法中菜的烹调方法至少有50种,[2](P34)笔者在前人的基础上进行总结比较,归纳出以下主要常用的11种:1. 炒(stir-frying),是指锅内放油、油烧熟,下生料炒熟。

“然而‘炒蛋’的英语却是scrambled egg,不译fried egg。

”[3](P34)2. 煎(pan-frying),即在锅内放上少量的油,待油达到一定温度后将菜料放入锅内进行短时间的烹煮,如煎鸡蛋(pan-fried egg)。

3. 爆(quick-frying),是旺火热油,原料下锅后快速操作。

要求刀工处理粗细一致,烹前备好调味品,动作要麻利迅速。

如爆大虾(quick-fried shrimps)。

4. 炸(deep-frying), 将主料挂糊或不挂糊下热油锅,由生炸熟的方法,外焦里嫩。

如五香炸鸡翅(deep-fried chicken wing with spicy flavour)。

如再细分,还可分为干炸(dry deep-frying),软炸(soft deep-frying)和酥炸(crisp deep-frying)。

5. 烧(braising),是先将主料用油炸过或用火焯过,再加上辅料,兑入汤汁煨至熟烂的方法。

“用酱油来烧,叫红烧——braising with soy sauce,”[4](P34)或braising in brown sauce。

6. 煮(boiling),指在锅里放入水或有调料的沸汤,将锅放在慢火上烧,再放入菜肴,时间可长可短,由事物的品种和食者口味而定。

“煮还可分速煮(instant boiling),北方的涮羊肉instant boiled mutton,广东的‘打边炉’chafing dish也属此类,和快煮(quick boiling)。

”[5](P34)7. 蒸(steaming),是将生料或半熟原料,加调料调味后上笼屉蒸熟的方法。

如荷叶粉蒸肉(steamed flour-coated pork wrapped in lotus leaves)。

8. 煲/炖/煨/焖/卤(simmering/stewing),这五种烹调方法基本相同,都是将食物放在水、汤或汁之中,用文火慢慢加热,用火时间一般较长,如炖栗子鸡(stewed chicken with chestnuts),煨牛肉(simmered beef)。

“在水中煲是stewing in water,将食物放在水中煲,如广东肇庆的‘剑花猪肉汤’译为stewed port soup with crab cactus flowers。

隔水炖是stewing out of water,用于炖补品。

淮杞炖生鱼是stewed snakehead fish with Chinese yam and fruits of Chinese wolfberry。

倘若放进味汁里煮,那就是‘卤’-—stewing in gravy 了。

”[6](P34)9. 熏(smoking),通常是将宰杀后的禽肉野味,用调料香料调制后,用特殊的树木柴禾熏烤而熟,这种菜肴往往具有独特风味。

如熏山鸡(smoked pheasant)。

10. “烘烤铁烧:铁烧(broiling或grilling)是将食物放在铁板或铁架上用明火烤。

烧烤(roasting)是在火上,火前或在铁架上烧。

烘(baking)指将食物放在密闭的烘炉里或铁板或铁架上用明火烤,食物与火不直接接触。

浇油烧(basting)是指在食物烧烤过程中不时浇淋调味油,以防烤焦。

要知道这些烹调方法的味道,不妨尝一尝奶油烧鱼柳(grilled fish with butter sauce),铁烧牛扒(grilled beefsteak),烧乳猪(roast suckling pig)。

” [7](P34)11. 白灼(scalding或blanshing),将食物放在沸水中烫熟,然后取出再放佐料或用热锅炒。

此法主要用于新鲜海味,如白灼海螺片(scalded sliced conch)。

三、菜名的命名方式和文化内涵菜名是菜肴的重要组成部分,具有商业功能和推销价值。

菜名就其功能而言,主要表现为信息功能、美学功能、社会文化功能等。

一道好的菜,如果配有一个奇妙、雅致、响亮的名称,一定会使人心情愉快,食欲大增,所以中国菜除了色、香、味、形、器等要求外,还有一个“名”的问题。

美食必有美名,食以名传,名以食传。

中餐菜名的命名主要是根据料、味、形、质、色、时令、烹调技法、地名、人物、典故、比喻、寄意、抒怀、数字等。

从大的方面看,可以概括为三大类:(一)、写实命名法这是由实指词汇组合构成菜名的方法,是中菜命名中最主要和采用最广泛的直观方法,观其名称,就能了解菜肴的某些特点,如原料的组成、颜色和形状,烹制方法,菜肴的味道等。

此类菜名翻译时适合用直译法,直接明了。

如“蒜茸蒸龙虾”(steamed lobster with garlic)。

(二)、虚实命名法这是就菜肴某一方面特征进行美化的命名方法,其名称由实指词汇和虚指词汇组合构成,实中有虚,看菜名即知其原料,同时,还有几分雅趣。

“如兰花小竹笋(sauté fresh bamboo shoots shaped like orchids)是精选鲜嫩小竹笋,笋尖用刀切成兰花形状再用油煎。

”[8](P25)“兰花”表示笋成菜后的造型,这是对菜肴形状的美化。

又如“太极芋泥”(Taiji taro cream),这道菜一边是芋泥,一边是深色的乌豆沙,和谐对称,体现了一种既对立又统一、既柔美又壮美的和谐美,表达了一种如意、健康、明朗、喜庆、吉祥、幸福的愿望。

“太极”是根据菜肴的造型如“八卦”而取的。

翻译此类菜名时可用意译法,直译+意译法,转译法。

(三)、艺术命名法一道菜名本身就是从诗词歌赋、典故、成语或者优美的传说中引用而来的,一张菜单本身就具备了很高的文学欣赏的价值。

如甲鱼炖鸡(steamed turtle and chicken)这道汤菜取名为“霸王别姬”。

此类菜名一般不反应菜肴的烹法或原料,翻译时适合用意译法或直译+释意法。

如果再具体分类,艺术命名法可以分为以下3种类型:1.喜庆型即给菜肴取一些吉祥的,祝福性的名字。

例如四块一盘的红烧肉,取名为“四喜肉” (braised brisket with brown sauce),便有了"四喜临门"的好口彩。

听到这道菜的名称,人们会产生喜悦心理。

所谓“四喜”,旧时是指福、禄、寿、禧;也可以是指《四喜诗》所赞美的四件喜:“久旱逢甘雨,他乡遇故知,洞房花烛夜,金榜题名时”。

菜肴以“四喜”为名,表示对美好生活的向往。

2.夸张型就是把菜肴加以夸张和想象,安上一个华贵的名称。

如“天下第一菜” (fried shelled shrimps on toast),这道菜是将锅巴在滚油中炸酥,再用虾仁、熟鸡丝、鸡汤等熬成浓汁,送上桌时将汁浇在锅巴上,盘内发生“嘶啦”一声,冒出一缕青烟,香味扑鼻。

乾隆帝品尝后觉得鲜美异常,即赞道:“此菜堪谓‘天下第一菜’”。

从此得名,留传至今。

3.典故型即菜名含有故事,非同一般。

如湖北名菜“草船借箭”(deep-fried mandarin with egg and bamboo shoots)是用鳜鱼作船,蛋松充草人,笋丝比箭,制成形态逼真的“草船借箭”佳肴,就是出自《三国演义》中一段脍炙人口的故事。

四、菜肴名称的翻译方法“菜肴名称翻译的核心内容是菜是用什么原料,用什么烹调方法做出来的。

”[9](P33)笔者认为其次应能反映出菜肴的色香味等主要特点,如有可能还应简略介绍与菜肴有关的民俗风情或历史传说,表达应该简洁明了。

中国菜的汉译英目前并没有固定或规定的译法,因为口译和笔译时往往会因人而异,因环境而异。

笔者在之前也看过不少相关的文章,摸索积累了点滴的经验,也想对此问题做一些补充。

(一)、直译法由于汉语和英语的差异很大,把中餐菜名翻译成英文时大部分情况下都应采用写实性译法,特别是对于写实性的菜名,应尽量把菜肴的原料、烹制方法、菜肴的味型等翻译出来,以便让客人一目了然。

1.以烹调方法开头的翻译方法烹调方法的译法在上文已经提到。

对于能清楚反应烹调方法的菜名,英译时应将其对应的烹法译出来,再译其主料。

具体有以下三种情况:(1)烹调法+主料(形状)炒鳝片Stir-fried Eel Slices煨牛肉Simmered Beef清蒸鳊鱼Steamed Limande(2)烹调法+主料(形状)+(with)辅料蟹粉蒸鱼肚Stewed Fish Tripe with Crab Meat腐乳汁烧肉Braised Pork with Preserved Bean Curd辣子炒肉丁Stir-fried Diced Pork with Green Pepper(3)烹调法+主料(形状)+(with,in)调料红烧鲤鱼头Braised Carp Head with Soy Sauce辣味烩虾球Braised Prawn Balls With Chilli/Chili Sauce清炖猪蹄Stewed Pig Hoof in Clean Soup2.以主料开头的的翻译方法有些菜肴名称不反应烹调方法,在不明确制作方法的情况下只需译出其主料,再用介词with 或in接其辅料或调料。
