食谱糖醋瓦块鱼味型:酸甜技法:炸烩主料:胖头鱼尾部(花鲢)辅料:调料:盐料酒胡椒粉番茄酱白糖生粉生姜大葱制作步骤:1 将鱼肉清洗干净切成厚片或条状,用盐、料酒、胡椒粉、姜、葱码味,然后用生粉、鸡蛋上浆备用;2 锅里倒油烧至六层热,将鱼片下锅,炸干水分捞出;3 锅里放少许油,番茄酱,炒香后加入少许水,倒入白糖,盐少许,调匀后勾芡,放入醋,倒入鱼块,调匀起锅装盘。

特点:色泽洪亮,口味酸甜,外酥里嫩蒜香蒸小排味型:蒜香味技法:蒸主料:猪排骨辅料:芋头调料:盐料酒胡椒粉鸡精味精蒜末香油葱花蚝油制作步骤:1 将排骨切成小块,用水浸泡沥干水分,用盐料酒胡椒粉码味,然后将加入蒜末拌匀,再加入糯米粉调匀;2 小芋头切成小块,加入盐、鸡精、味精拌匀,垫油放入蒸盘,然后放好的排骨放在芋头上上笼上气蒸四十分钟取出装盘,撒上葱花。

特点:色泽暗红,口味咸鲜,蒜香味浓,排骨耙软麻香牛肉味型:酸麻技法:煮主料:牛里脊辅料:青笋金针菇小米椒调料:盐料酒胡椒粉鸡精味精蚝油生抽泡菜泡萝卜白醋生姜大蒜小葱制作步骤:1 将牛里脊去筋膜切成薄片用水浸泡,之后沥干水分用盐、料酒、胡椒粉、蚝油、生抽码味,后加入鸡蛋清、生粉上浆淋入油待用;2 金针菇去头,青笋切丝穿水垫入盆内,小米椒切丁,泡菜、白萝卜切小片,姜蒜切末;3 锅里放入少许油猪油或菜籽油,放入姜蒜末,泡菜泡萝卜野山椒炒出香味后,放入汤调味鸡精、味精、胡椒粉,然后倒入牛肉片慢火煮断深,淋入白醋,然后倒入金针菇上盐,撒上小米椒丁葱花即可。

特点:色泽淡黄,口味酸辣,牛肉滑嫩注:热油撒上青花椒,浇在小米椒上。

香酥掌中宝味型:香辣技法:煮炸炒主料:掌中宝(鸡的爪子鸡脆骨)辅料:青红美人椒香辣酥花生米干辣椒花椒调料:盐料酒胡椒粉鸡精味精白糖花椒油红油姜葱蒜制作步骤:1 将鸡脆骨穿水后,重新煮(盐干辣椒花椒姜葱)煮深捞出;2 姜蒜切片,小葱切丁;3 锅里放油,烧至五层热,将掌中宝粘生粉下锅炸干水分捞出;4 锅里放入少许油,放入干辣椒、花椒,再下入姜蒜片,青红美人椒丁,炒一下倒入掌中宝调味(鸡精、白糖少许、麻椒面),炒匀后淋入花椒油、红油、倒入香辣酥起锅装盘,撒上葱花,白芝麻。

萝卜烧排骨1.将排骨洗净。

2.过沸水淖3分钟。

3.葱、姜、蒜准备好。

关于牛肉的切法,上说牛肉纤维粗,一定要逆着牛肉的纹理切,将纤维切断,不过我发现牛肉既有横又有竖的纹理,到底怎样切才是最妥的刀法呢?貌似并不影响口感,只有慢慢学习摸索了。
