一、现代文阅读(一)论述类文本阅读(9分,每小题3分)中国菜的绝技,一是蒸。

有些药可能有毒,吃了会死,但是在某些时候是可以吃的,如冬天那么冷,渔夫要潜水取珠,需吃点儿砒霜才可以御寒,但也不是直接吃,而是配起来吃。

炒菜也一样。

不同的菜,怎么样搭配起来,它的温、热、凉、寒大有讲究。

例如白菜性寒,我们会在里面配姜丝、配虾米,做成开阳白菜,调节它的寒热。

去吃涮羊肉,里面的配菜,如豆腐、粉丝、鸭血、茼蒿、大白菜等,都是寒性的。

因为羊肉温热,火锅烧起来更热,所以加的菜都是凉的,使之平衡。

炒菜也一样,要会搭配,我们流传下来的做菜之法,都是千锤百炼而成。

我们的菜谱、食谱,在唐朝以前都是单品,宋代以后才有多品的菜。
