说起家乡的美食，首先就是热干面。
其实，热干面并不是信阳的特色，原本是武汉的食品，不知道什么时候传到了信阳，经过改良之后的热干面，成了信阳人的最爱。
说来也奇怪，除了信阳之外，在河南省的其它地方，热干面并不是那么受欢迎，可能与调料，水有很大的原因。
信阳的热干面所用的调味品中有一味神秘的调料--鲜辣粉，在别处是买不到的，甚至连郑州这样的大城市也无处可寻。
