说起家乡的美食,首先就是热干面。
其实,热干面并不是信阳的特色,原本是武汉的食品,不知道什么时候传到了信阳,经过改良之后的热干面,成了信阳人的最爱。
说来也奇怪,除了信阳之外,在河南省的其它地方,热干面并不是那么受欢迎,可能与调料,水有很大的原因。
信阳的热干面所用的调味品中有一味神秘的调料--鲜辣粉,在别处是买不到的,甚至连郑州这样的大城市也无处可寻。
氽过开水的热干面舀一勺芝麻酱,加上鲜辣粉,胡椒粉,再浇上豆酱汁,生抽,加点儿味精,洒上切碎的榨菜,翠绿的葱花,鲜嫩的香菜,最后淋上点儿香油,再来点儿熬的通红的辣椒油,拌好味儿的热干面,黄的面,绿的葱,红的辣椒,闻着香气扑鼻,吃起来鲜香咸辣,真是色香味俱全,让人欲罢不能。
