• 非正宗新疆大盘鸡的做法

椒盐排条
材料:猪大排(猪里脊或鸡里脊都可)、鸡蛋、淀粉 、 面粉。
调料:料酒、盐、葱姜蒜粉、椒盐。
做法: 1、猪排用刀背剁松,切成手指粗细的排条;
2、用料酒、盐、葱姜蒜粉把排条拌匀,腌制半小时;
3、鸡蛋打匀,把排条放入鸡蛋液中,加入干淀粉,抓捏几下拌匀上浆;
4、把上好浆的排条放入干面粉中蘸一下,使面粉均匀包裹排条;
5、油锅里烧热后到入油,烧至七成热,将排条抖去多余面粉,一条一条放入油
锅煎炸,防止粘连;

6、炸至金黄色,捞出沥油并用厨房纸吸去多余油,装盘撒上椒盐即可(也可以
吃时另外蘸椒盐食用)。
茄子鱼
茄子曾经被作为防病治病的神奇食材大炒特炒过,虽然真实的它营养价值远不如有些人
说的那样神乎其神,不过,作为一种普通又便宜的蔬菜,茄子在营养方面值得称道的地方还
是不少的。茄子的营养较丰富,含有蛋白质、脂肪、碳水化合物、维生素以及钙、磷、铁等
多种营养成分。
原料:茄子一个 大蒜3瓣 葱5克 姜5克 酱油3克 料酒2克 盐3克 白糖2
克 淀粉3克
做法:1.茄子洗净,去皮。
2.茄子从中间切开,一分为二。
3.做出鱼的形状,用刀在茄子上划纵横交错的纹理,再用筷子做个鱼眼睛。
4.茄子鱼放入水中,浸泡十分钟左右。


5.茄子鱼从水中取出,控干水分,锅中放适量油烧温,茄子放油中炸至。
6.葱姜蒜切末。
7.用小火慢慢炸,炸透后捞出备用。
8.碗中放入酱油﹑白糖﹑盐和料酒,加水搅拌成汤汁。
9.锅中放少量油,加葱姜蒜炒出香味。
10.放入炸好的茄子鱼,倒入调好的汤汁,大火烧开后转小火
11.淀粉加水,搅拌均匀。
12.煮至汤汁变少的时候,倒入淀粉水勾芡即可出锅。

红烧小土豆

材料:小土豆、香葱
调料:盐、酱油、白糖、鸡精
做法:(1)将小土豆洗净放入高压锅里,倒入水盖上盖烧煮3后分钟后关火,
焖至没气后开盖。
(2)取出煮熟的小土豆放入盘中晾凉一下去皮,待用

(3)烧锅倒油烧热,下入煮熟的小土豆翻炒一下。
(4)接着,加一些水煮开。
(5)然后,加点酱油、盐、白糖调味煮至汤汁快要收干时,加点鸡精炒匀。
(6)最后,撒上香葱,即成。
